    Haluski

    Haluski is a simple and tasty noodle and cabbage from the eastern Europe region. This is popular comfort meal in Poland, Ukraine, Slovak, and Hungary. 
    This satisfying, delicious noodles is made with cabbage and onions sautéed in butter with a perfect seasoning of salt and pepper. Butter adds the comforting flavor to this noodle. The heat comes from black pepper alone. Adjust the pepper as per taste. Freshly ground pepper adds tons of flavor to this noodle.
    Egg noodles are traditionally used for this recipe. I have replaced it with vegan noodles for this recipe. Any wide noodles can be used. This is a vegetarian version and hence bacon is not included. To make a vegan version, the same can be made using oil instead of butter.
    This is a pure comfort noodle. This noodle gives the same satisfaction when you have cabbage curry mixed with ghee rice. As a kid, I did enjoy ghee rice with curry and hence was able to feel those days. My kids loved this noodles. It is simple and easy to prepare and can be easily made for a weeknight dinner. Begin boiling the water to cook noodles when you start chopping the veggies for effective time management. In this way, when the veggies are ready and cooked, noodles would be ready too and finishing the cooking would be easier and quicker. The leftovers are great too. Just reheat and enjoy.

    Ingredients
    Prep time: 10 minutes
    Cook time: 30 minutes
    Serves 4 to 6 persons
    Noodles - 12 oz
    Butter - 6 tbsp
    Onions - 2 cups, sliced
    Cabbage - 7 cups, 1/4-inch slices
    Salt - 1.5 tsp plus 3/4 tsp
    Pepper - 1 tsp
    Water to cook noodles
    Method
    Slice the onions and cabbage to 1/4-in thick slices. Heat butter in a Dutch oven. Add the onions and sauté for 3-4 minutes. 
    When it turns translucent add the cabbage and sauté for 2 minutes. Add salt and pepper and cook the cabbage for 2 to 3  minutes. 
    In the meantime, cook the noodles according to the package directions, drain, and set aside. Prefer cooking my noodles in salt water with a drop of oil.
    Add the cooked noodles, stir-fry and combine thoroughly. 
    Serve immediately.

      Wow! My older one makes noodles for herself just like this and I never knew they were called by a different name 🙂 My kids love these noodles and I am sure I will let them know the name of the dish
