    About these coconut gingerbread muffins

    These vegan muffins with coconut and gingerbread flavors are the ultimate breakfast for the holidays! The classic holiday flavors of ginger, cinnamon, and molasses get a soft, tropical lift from coconut milk and shredded coconut. These make a delicious and warm breakfast.

    The flavors of gingerbread in this muffins adds a touch of warmth and the coconut and pecans give a crunchy bite making every bite heavenly! Ginger, cinnamon, cloves and nutmeg along with molasses bring out the best warm flavors with the ideal balance in flavors for the cold winter season. These muffins are rich in texture and flavors!

    By the way, I make these muffins with wholewheat and hence very healthy too! Loads of mutrition packed in your breakfast fueling you with the right nutrition at the start of the day.

    Ingredients

    To make these delicious coconut gingerbread muffins, you will need the following ingredients:

    Whole wheat flour - forms the base of the muffins adding proteins and fiber to your meal

    Coconut milk - adds flavor

    Coconut sugar and maple syrup - sweetens the muffins and enriching with flavors

    Molasses - adds to the flavor and color depth of the muffins.

    Spices - ginger, cinnamon, nutmeg, and cloves add to the flavors and the warmth.

    Pecans and shredded coconut - enhances the experience adding flavors and textures.

    Flaxseed powder and aquafaba - act as binders in this recipe

    Salt - enhances flavor

    Oil - neutral oil works best. If you love coconut, use coconut oil.

    Baking soda and baking powder - leavening agents.

    Vanilla - enhances aroma and flavor.

    Serving Suggestions

    Serve these coconut gingerbread muffins with ginger chai or masala chai for a perfect combo! This is the amazing holiday breakfast. The flavors of the chai and muffins will complement and it is just hard to describe the feeling! In simple words, it is an amazing experience! This can be served with coffee or milk too!

    Storage

    I usually store leftovers in the refrigerator for three to four days. I pop them in the oven over warm settings and serve with a cup of ginger or masala chai for perfect breakfast or as an evening snack.

    Ingredients

    • 1½ cups Whole wheat flour
    • 1 tbsp Flaxseed powder
    • ⅛ tsp Salt 
    • 1 tsp Baking powder
    • ½ tsp Baking soda 
    • 1 tsp Ginger powder
    • 1 tsp Cinnamon powder
    • ⅛ tsp Nutmeg powder 
    • ⅛ tsp Ground cloves
    • ½ cup Coconut milk
    • ½ cup Coconut sugar
    • ¼ cup Maple syrup
    • 3 tbsp Molasses
    • ¼ cup Oil
    • 3 tbsp Aquafaba
    • ¼ cup Shredded coconut unsweetened
    • ¼ cup Pecan chopped

    Instructions

    • Add the four, salt, spices, baking powder and baking soda to a bowl, and mix.

    • Mix the flaxseed powder with coconut milk to gel and set aside for 5 minutes.

    • Add the wet ingredients to bowl, and mix.

    • Add this to the flour mixture and mix quickly to make a muffin batter.
    • Fold in the pecans and coconut.

    • Scoop into lined muffin tray.

    • Bake for 17 -18 minutes or until the toothpick inserted comes out clean. Remove from the oven and cool for 10 minutes.
