This is easy to prepare and a very healthy breakfast. Pancake puffs are made in ebelskiver pan. We call that as kuzhipaniyaram pan or appe pan. Traditionally, we make Vegan, Gluten-free rice Kuzhipaniyaram using the pan. Whole Wheat Appam is a common traditional dish in our cuisine that is made during festivals that is deep fried, though it can be made in appe pan too. But with the gingerbread flavors, they are amazing breakfast too!
These are amazing to serve with maple syrup on the side. But more inviting when sprinkled with powdered sugar and/or a drizzle with maple syrup. Personally dunking a bite in maple syrup is divine! And it is guaranteed that you can't stop with that bite. The scintillating flavors adding warmth will lead you to the next bite! Just amazing!
The amazing flavor profile is enough to convince anyone to have this everyday! This recipe uses whole wheat but regular flour can also be used. If you do not have this pan, make it into pancakes or waffles. These are delicious in that form too.

Ingredients
Makes 24
Whole wheat flour - 1 cup
Salt -1/4 tsp
Baking powder - 1 tsp
Ginger powder - 1 tsp
Cinnamon - 3/4 tsp
Ground nutmeg - 1/8 tsp
Groung cloves - 1/8 tsp
Almond flour - 2 tbsp
Almond milk -1 cup
Molasses - 3 tbsp
Brown sugar - 3 tbsp
Oil - 2 tsp
Aquafaba - 3 tbsp
Method
Mix the dry ingredients and set aside.
Add the wet ingredients to the dry ingredients and mix to form a smooth batter. The consistency should be that of a pancake batter.
Heat the appe/ebelskiver pan on just below medium flame. Add a drop of oil, pour the batter into the cavities. Drizzle about 1/4 tsp oil around the edges.Cook for about 3 minutes. Bubbles will start appearing on top.
Sprinkle a little powdered sugar or drizzle with maple syrup. Serve with maple syrup along to dunk and enjoy! Serve warm.
