This is the best and delicious, healthy and wholegrain breakfast to wake upto! The spices in this oats warm you up on a cold winter morning. The perfect blend of flavors in this steel cut oats recipe along with nutty bites is not just good, it is PERFECT YUM! This recipe is vegan.
Molasses adds a beautiful flavor. This kind of reminds the temple style sweet pongal aka sarkarai pongal minus cinnamon and ghee. A tiny bit of nutmeg and clove are added in addition to cardamom and mace in temple style sweet pongal. The spices and the molasses in this gingerbread has the perfect tones of the sweet pongal and having this as breakfast is divine!
Almond milk is used but any plant based milk can be used. I prefer not to use coconut milk for slow cooking. Coconut milk can be added in the last 30 minutes. If added earlier, it may curdle. Regular cow milk can also be used.
This recipe is made with steel cut oats. Quick oats may not work as desired. With the right oats and rest of ingredients, it is easy as a piece of cake! Just add and mix, set it on low for 8 hours. Wake up for an amazing breakfast!
The brown sugar used gives perfect but not too sweet. If you have sweet tooth, add one more tablespoon of brown sugar. Extra molasses or maple syrup can be drizzled on top too! Almond, walnuts, or pecans are amazing toppings.

Ingredients
Serves 2
Prep time: 5 minutes
Cook time 8 hrs
Steel cut oats - 1/2 cup
Water - 1/2 cup
Almond milk - 3/4 cup
Ginger powder - 1/2 tsp
Cinnamon powder - 1/2 tsp
Ground nutmeg - a pinch
Ground cloves - a pinch
Brown sugar - 2 tbsp
Molasses - 1 tbsp
Cooking spray
Toppings
Molasses
Maple syrup
Walnuts, almonds, or any preferred nuts
Method
Spray the slow cooker generously. Add the dry ingredients. Mix. Add the water, almond milk and molasses. Stir.
Set the slow cooker on low setting for 8 hrs.There may a thin crust on top. If you do not like remove it. Or just mix with the rest of the oatmeal.
Serve warm with extra drizzle of molasses and/or maple syrup, nuts.
