    Whole wheat Thandai muffins

Look no further than these whole wheat thandai muffins that bring you the festive flavors of Holi in the vehicle of your everyday nutrient filled breakfast muffin! 

    Why Whole Wheat Thandai Muffins?

    It is the thandai mix that gives a one of a kind flavors to these muffins. Thandai is a nutty and spicy chilled drink served during Holi, Festival of Colors, or Spring festival. This mix has cashews, almonds, pistachios, along with fennel, black pepper, and cardamoms. The spice combination gives the unique flavors.     Further, these muffins are healthy and wholesome. Since they are made with whole wheat instead of all purpose flour, these whole wheat thandai muffins not only boast with flavor but also essential nutrients that our needs while satisfyinf quick hunger.

    Ingredients

    You will require the following ingredients to make a batch these whole wheat thandai muffins.

    Whole wheat flour - Whole wheat gives wholesome nutrition. I prefer to use as much as whole grains as possible. You can use all purpose flour but make sure to check the liquid ingredient content required.

    Thandai mix - the star of the recipe giving immense and unique flavor. Look for the recipe here.

    Milk powder - This recipe uses non fat dry milk powder which enhances nutrition as well as flavor.

    Baking powder and baking soda - Leavening agents.

    Flaxseed powder - this recipe is eggless and flaxseed powder is the egg substitute.

    Milk- the liquid content that also adds flavors, just like in traditional Thandai recipe.

    Salt - balances the flavors.

    Brown sugar - This recipe uses organic brown sugar as the sweetener. You may substitute with sugar instead.

    Oil - Any neutral flavored oil will work in this recipe.

    Vanilla - flavor enhancer.

    White chocolate chips - these make the muffins even more delicious.

    How long does it take to make these muffins?

    Muffins are quick recipes and once you have the ingredients ready, it just takes a couple of minutes to whip up the batter. Baking takes about 16 minutes. In total, in about delicious muffins are ready in under 30 minutes

    Storage

    This recipe makes about 12 regular muffins. You can store these muffins at room temperature for a couple days. If you refrigerate, these muffins will stay fresh for 4-5 days in the refrigerator. Pop in the oven or microwave for a couple of minutes to serve it warm.

    Serving Suggestions

    These muffins are great when served warm. You could serve with coffeee, chai latte, or even a cup of milk. I love a cup of masala chai with this muffin.

    Since this muffin has the classic flavors of Holi festival, this is a great idea to make it add a new twist to your menu while enjoying classic flavors on the same festival day. Thandai screams Holi and now you got to bake these muffins to share with freinds and family for absolutely fun and delicious breakfast or snack.

    Whole Wheat Thandai Muffins

    Ingredients

    • 1 Cup plus 2 tbsp Whole wheat flour
    • ⅓ Cup Milk powder
    • ⅓ Cup Thandai powder  (RECIPE HERE)
    • ¾ Cup Milk 
    • 2 tbsp Flaxseed powder
    • ⅓ Cup Oil
    • ½ tsp Baking soda
    • 1 tsp Baking powder 
    • ¾ cup Brown sugar
    • ½ cup White chocolate chips
    • ⅛ tsp Salt
    • 1 tsp Vanilla

    Instructions

    • Preheat the oven to 350 ℉
    • Mix the flaxseed powder in milk and set aside to gel.

    • In a bowl, add the whole wheat flour, salt, baking powder, baking soda, nonfat dry milk powder, and Thandai mix. Mix and set aside.

    • To another bowl, add the oil, flaxseed mixture, brown sugar, vanilla.

    • Pour this on to the dry ingredients. Mix quickly.

    • Bake for 16 minutes or until an inserted toothpick comes out clean.

    • Cool for 15 minutes. Serve at room temperature or warm.
