    Caprese Cups

    This is an easy and adorable bite sized appetizer that is most delicious! When served this way, it makes the occasion extra special and festive. You can hear all the oohhs and aahhhs!  This keto appetizer will be gone in a flash for sure.


    If you are looking for a last minute appetizer, or an easy one, or the most popular and loved one, yes! You have landed in the right page. These are cute and bite sized, perfect for any occasion as a finger food. This can be an amazing and healthy snack too!

    All you need to make these are grape tomatoes, mini mozzarella, and reduced balsamic vinegar. Balsamic reduction is very simple, just simmer the balsamic vinegar to half! That’s all. I always have this in hand to fix a super quick snack or even an amazing caprese sandwich. 

    Grape tomatoes work great for this bite sized version. If you have only beefsteak tomatoes, check the Caprese Salad to make a delicious appetizer. If you have bigger mozzarella balls, fret not, just chop them and use. It is impossible to go wrong in this one!
    It takes about 10-15 minutes to fix this one! Just cut the tomatoes a little, scoop out a little pulp so that it is easier to place a mozzarella chunk and a basil leaf, and go the drizzle! It is guaranteed that you will needing more and more if this appetizer.

    It is delicious, easy to make, everyone’s favorite - and this bite sized keto caprese salad is a perfect one for holiday parties. It is perfect and festive! This is also an amazing choice for summer, when both tomatoes and basil are in peak production. This makes summer entertaining a breeze. Just add chunks of mozzarella and baby tomatoes along with basil, pesto and/or balsamic reduction.     Ingredients 
    Makes 18
    Grape tomatoes- 18
    Mini mozzarella balls - 9
    Basil leaves - 18
    Salt - 2 pinches
    Fresh ground pepper - 2 pinches
    Balsamic reduction - 1 to 2 tbsp
    Method 
    Chop one-third of the tomato at the tip (opposite to stalk). Scoop out a little of the pulp. These can be reserved and used later in other recipes.

    Cut each mini mozzarella ball into two. Place a basil leaf and a piece of mozzarella. 
    Sprinkle a little salt and pepper. Drizzle about a teaspoon balsamic over the tomatoes and reserve the remaining, if needed, can be used for extra drizzle.
    Transfer to serving platter or board.
