Ingredients
Makes 18
Grape tomatoes- 18
Mini mozzarella balls - 9
Basil leaves - 18
Salt - 2 pinches
Fresh ground pepper - 2 pinches
Balsamic reduction - 1 to 2 tbsp
Method
Chop one-third of the tomato at the tip (opposite to stalk). Scoop out a little of the pulp. These can be reserved and used later in other recipes.
Cut each mini mozzarella ball into two. Place a basil leaf and a piece of mozzarella.
Sprinkle a little salt and pepper. Drizzle about a teaspoon balsamic over the tomatoes and reserve the remaining, if needed, can be used for extra drizzle.
Transfer to serving platter or board.
