    Vegan Butternut Squash and Chestnut Kebabs

    This is a delicious, healthy, and scrumptious kebabs made with garbanzo beans, butternut squash, carrots, chestnut with a hint of rosemary and ginger. This can be served with a salad and a yogurt dip. This is a vegan kebab and this is my third post for the weeklong #FallFlavors.

    Nairn's Oat Crackers are simply amazing and used them in this kebab to bring everything together. The oats in this cracker adds to the nutritional value of the kebab as oats are rich in fiber. This kebab is packed with nutrition. Melissa's fresh veggies gave peak flavors to the kebabs. Loved the chestnuts! Carrots, butternut squash, chestnuts, onions and ginger, along with protein-rich garbanzos make this a hearty and nutritious one.

    When the veggies are roasting, garbanzos can be cooked and everything can be put together easily. This will be amazing for a relaxed weekend bruch, making the day special. I have used garbanzos but any legume can be used. 
    One thing to remember, if you are using wooden skewers, soak in water for 30 minutes. When you start prepping the veggies, soak the skewers are tey will be ready when you shape the kebabas. Metal skewers can also be used.

    Ingredients 
    makes 8

    Butternut squash - 1 cup, diced
    Carrots - 1/4 cup, sliced
    Onions - 1/2 cup, chopped
    Garlic - 1 tbsp, chopped
    Ginger - 1 tsp, chopped
    Salt and pepper - 1/8 tsp each

    Nairn's Oat crackers - 1/3 cup
    Salt - 3/4 tsp
    Cayenne - 3/4 tsp
    Garbanzo beans - 1 cup, cooked
    Chestnuts - 8
    Oil - 2 to 3 tbsp
    Method
    Soak the skewers in water for atlest 30 minutes.
    Het the  oven at 400 degrees F. Add the squash, carrots, onion, garlic, ginger, rosemary, 1/8th teaspoon salt and pepper to a baking tray. Add a teaspoon oil, mix gently, spread as a single layer. 

    Roast in the oven for 20-25 minutes. Set aside to cool.

    Blitz the crackers in food processor to get a fine powder, Set aside.

     return th efood processor, add the beans, chestnut, garbanzos, salt, cayenne and run a acouple of times. Add the Nairn's oast cracker crunbs.

    Transfer to a bowl. When it is warm enough divide it into 8 portions.

    Take a skewer and press down gently a ball of dough into oblong shape. Set aside and repeat with rest of the dogh.

    Heat a pan, drizzle a little oil, place the kebabs. Drizzle a teaspoon oil and cook them flipping once they are done each side. 

    Flip and cook all the sides. Repeat the process for all the skewers.

    Transfer to a serving plate and serve with salad and yogurt raita.

      The flavors of the squash and chestnuts together were perfect! I loved the crispness of the outside of the squash! All the textures worked so well together to make a yummy meal!
