    Apple Cinnamon Steel Cut Oats

    This is a simple and delicious recipe to make apple cinnamon flavored healthy breakfast using steel cut oats. This recipe can be easily veganized by replacing the milk with any plant based milk. I love to make this almond milk too.
    Breakfast is a "MUST" in our home and I don't encourage skipping it. Brain and body needs great kick start in the morning to push us over the day filled with challenges. The right fuel is necessary for that kick start. Healthy options can be included for a healthier life. 
    Oats is one of my favorite breakfast option and is heart healthier too. My usual bowl full of oats may be savory too like this Masala Oats or Instant Pot Oats Pongal. Sometimes I like plain oats with a little mango or lemon pickle. Other times, depending on the seasonal veggies or fruits, and with the request from my kids, I play around with it for a healthy breakfast.
    Apples were ripe and perfect for picking in my friend's backyard. Myself and kids loved picking the apples in JD's backyard. Those were delicious ones. Apples are one of favorite and I love the combo of apples and cinnamon. I like it so much that often I would like to make Apple Crisp For One, yes, single serving to satisfy the cravings. Apple cinnamon oats are always welcome and loved in our home. Fresh homemade ones is full of flavor than store-bought mixes. I prefer making my own. Also, dicing the apple to small pieces helps in faster in cooking as well as for increased flavor in oatmeal. But it would work if you prefer bigger chunks too.

    In this recipe, I have used the fresh apples from JD's and made this lovely breakfast using steel cut oats. I love using steel cut oats for all the recipes other than cookies. Rolled oats can also be used for this recipe, the cooking time will be less. But I recommend using steel cut oats which is not a processed one. Rolled oats are great for crisps like this Fresh Cherry and Nectarine Crisp with Oat Streusel. Here are some of the cool breakfast smoothie bowls which include rolled oats.

    Ingredients 
    Serves 3
    Prep time 5 mins 
    Cook time 20-22 min
    Oats - 3/4 cup
    Apples - 1.5 cups, diced
    Cinnamon - 1/2 tsp
    Brown sugar - 6 tbsp
    Milk - 1/2 cup
    Pecan - 10
    Water - 1.5 cups
    Method 
    In a heavy-bottomed sauce pot, add the oats, apples, and cinnamon. 
    Add the water and cook for about 10 minutes on medium flame.
    Add the milk and brown sugar and mix.
    Continue to cook for another 10 minutes. Switch off the flame.
    Scoop into serving bowls and add pecans on top. Top with apple slices if preferred.
