This is a super soft bread that you would love to eat every time. These taste great as such, with tea or coffee, or with soup. They taste excellent jam or Nutella and they are great to make paninis. If you don't have an oven or when it is not working and want to make and enjoy fresh bread, try this recipe. This is a great recipe to make bread on the stovetop in a frying pan. It may not be possible to make a baguette this way, but mixed flour bread, sourdoughs, and flavor added bread can be made. Any basic bread dough can be used.
A couple of points to note - initial heat is needed for 3 minutes for the pan to heat up and begin the baking and then make sure to turn the heat to low. Else you will have a burnt bread and the smoke alarms may be blaring. Also, it is important to cover the bread with a lid to prevent drying on top. The lid has to be wrapped with a cloth or kitchen towel, to absorb the moisture, so that it doesn't fall on the bread and make it gooey and sticky.

This bread is simple and delicious that there is a wide range of options for further developments with added and filled flavors. The bread basically takes the shape of the pan, so play around with your pan and dough, adjust the cooking time accordingly and make delicious flavored bread in a frying pan. It can be made as rolls too.
Ingredients
Makes 1 loaf
All-purpose flour - 3 cups
Water - 1 cup
Salt - 1 and 1/4 tsp
Sugar - 1 tbsp
Butter - 3 tbsp, melted
Oil - 2 tbsp
Active dry yeast - 2 tsp
Butter for brushing - 1 to 2 tbsp, melted
Method
Activate the yeast in warm sugar water. In a bowl, add the flour and salt. Mix and make a well in the center. Add the yeast mixture, melted butter, and knead to a smooth dough. Coat the dough and the bowl with olive oil and cover. Set aside an hour for proofing.
After an hour, punch and knead the dough. Smear melted butter on a 12-in cast-iron pan. Place the dough on the center of the pan and gently push towards the edges of the pan evenly. Cover with a kitchen towel for the second rise for 30 minutes.
Brush the top with melted butter. Place the pan on medium heat for 3 minutes. Lower the flame to low and cover with a lid wrapped with a towel that fits perfectly. Continue cooking for 10 minutes.
Slowly flip the bread and cover it with the lid. Continue for another 10 minutes.
The bread would sound hollow. Remove from the pan. Brush with butter on both sides and cool on a cooling rack for at least 20-30 minutes.
Serve buttered with coffee or tea, or as a sandwich.
