Ingredients to make the raspberry swirl ricotta pancakes
You can make these pancakes with the following ingredients:
All purpose flour - this is the pancake base.
Ricotta Cheese - adds proteins, calcium and richness to the pancakes. It also adds to the fluffy nature.
Flaxseed powder - Adds protein and is also the egg substitute in this recipe.
Buttermilk - aids in making beautiful fluffy pancakes.
Baking powder and baking soda - leavening agent used.
Salt - enhances flavor.
Sugar - sweetens the pancake batter.
Lemon juice and zest - Lemon juice cuts through the richness and the zest brightens up the flavor. Do not skimp on this. If you prefer add a half teaspoon extra.
Raspberry - You can use fresh or frozen raspberries. These tart beauties balance the ricotta.
Butter - Adds flavor
Raspberry dessert sauce - This recipes uses Melissa's Produce Raspberry dessert Sauce. This is sweet and best. Perfect for sweet morning breakfast! This makes breakfast making easier. However, if you do not have ths, you coukd use homemade raspberry sauce.
Raspberries and whipped cream - Fresh or frozen raspberries and some whipped cream add to the delicious toppings that boost the overall pancake experience.

What else could be more perfect with these raspberry swirl ricotta pancakes? Of course with more raspberry sauce. The sauce will speak multitude stories of comfort in every bite. Add swirl of whipped cream and some fresh or frozen raspberries for that extra flavor bounce and comfort!
Storage
Our family loves these pancakes for its flavor. Although you serve pancakes immediately, these pancakes are good to store at room temperature for a few hours. If you are planning to use it later, you can refreigerate them and then reheat when needed. They are great for upto two days beyond which I haven't tried as these go off like a magic here. You could also freeze these pancakes.
How many servings does this recipe make?
This recipe makes six pancakes. These pancakes are heavy as ricotta adds to the richness and this recipe easily serves three. However, you might serve ths for two, depending on the hunger and capacity.
These pancakes are great in pancake boards. This is also a crowd pleaser. Make it in small size and add it to your festive or special, or birthday pancake brunch boards. This recipe can also be doubled or tripled to suit your needs.
A Tip to make even sized pancakes
I use an ice cream scoop to make pancakes all even sized. This ensures equal amount of batter in every pancake. However, the size of the pancakes and the count of pancakes may differ if your scoop size differs. That gives a wide variety of option. Use a cookie scoop to make smaller ones for pancake boards and that's what I do.

Raspberry Swirl Ricotta Pancakes
Ingredients
- 1 cup All purpose flour
- ⅔ cup Ricotta cheese
- ¾ cup plus 1 tbsp Buttermilk
- 2½ tbsp Lemon juice
- 1½ tsp Lemon zest
- 2 tbsp Flaxseed powder
- 1 tsp Baking powder
- ¼ tsp Baking soda
- 2 tbsp Sugar
- ¼ tsp Salt
- ½ cup Raspberries fresh or frozen
- 3 tbsp Butter
- 6 tsp Raspberry Dessert Sauce
Toppings
- Whipped Cream
- raspberries
- Raspberry Dessert sauce
Instructions
- Add flaxseed powder to half cup buttermilk and set aside to gel.
- Add the flour, salt, baking powder and baking soda to a bowl and mix. Set aside.
- To another bowl, add the melted butter, sugar, lemon juice, flaxseed buttermilk mixture, remaining buttermilk
- Add the wet ingredients to dry mixture and combine thoroughly.
- Fold in the raspberries and lemon zest.
- Heat a cast-iron pan. Add a half teaspoon of butter, and add a sccop of the pancake batter. Swirl the raspberry dessert sauce over the pancakes. Cook for 2-3 minutes. When the edges are firm and bubbles start appearing on top, flip and cook for 2 minutes. Remove from the pan and repeat with the remaining batter.
- To serve: stack a few pancakes, add a dollop of whipped cream, and raspberries. Drizzle the raspberry dessert sauce and serve immediately.
