    Whole Wheat Brown Sugar Boba Pancakes

    These are soft, fluffy, and tasty pancakes made with whole wheat and topped with brown sugar boba and brown sugar butter. This is a scrumptious breakfast.

    Boba rings a bell, right? Who doesn't love it? Especially, all the kids are crazy about boba and boba teas are their favorite ones. Boba is exactly soft, chewy balls made of tapioca starch (similar to our sabudana or sago). Colors and flavors can also be added to it. These pearls are quite popular among youth (as well as anyone) and are usually added to teas and drinks. We love to make our boba drinks at home experimenting and enjoying a cold drink. We experiment with different combinations and this Apple Cider Milk Tea with Boba and Caramel Apple is one of our favorites and the flavors are quite different from your regular drink. I would highly recommend it. We also try to recreate what we had from different tea chains and this  Winter Melon Milk Tea and Litchi Black Tea are often repeated ones. Boba is not just for tea. Try this Brown Sugar Boba Cream Pie for a unique dessert.
    Let's now focus on the pancakes. These are eggless pancakes made with whole wheat. I have used the brand of whole wheat available here and different regions might have different wheat varieties and hence the texture and nature of flour may vary. This might change the liquid measurements slightly. Just play around a little, one or two tablespoons more or less would make it perfect.  These pancakes are fluffy even without eggs and they are satisfying. It keeps hunger at bay till lunch and you would not think about snacking in between. This recipe serves two, and can be easily doubled or tripled. Top with additional fruits of your choice.

    We were watching the Beat Bobby Flay show and it was a pancake episode. Bobby Flay was smearing a little butter in between the stacks and I wanted to readily implement it. Well, it gave such a flavor and taste boost. It gives a nice uplift of flavors to the pancake when you use flavored butter. This is optional but would recommend it. Every bite of the pancake tasted divine.
    This week is all about breakfast in my Blogging Marathon theme. I chose this theme and since breakfast is the most important meal of the day, I wanted to share some tasty ideas for different age groups. I am a boba fan and so this pancake is perfect for me. This pancake will be loved by youngsters. For the older generation, here is a delicious South Indian breakfast board featuring different south Indian breakfast dishes in one. 
    Pancakes are easy to make and loved by everyone. This Mini Pancake Skewers will be especially great for any breakfast boards and kids would love to have this version. My favorite one is Coconut Pancakes, which is also eggless and can be made into waffles too. The batter is similar and hence the same batter can be made into pancakes, waffles, or pancake puffs. This Whole Wheat Gingerbread Pancake Puffs would remind of your traditional appam and would be a tasty delight for breakfast!

    Ingredients
    Makes 6 pancakes
    Serves 2

    For the Pancakes

    Whole wheat flour - 1 cup
    Salt - 1/8 tsp
    Milk - 1 cup plus a tabsp
    Brown sugar - 2tbsp
    Butter - 1 tbsp, melted
    Butter - 1 tbsp to make pancakes
    Baking powder - 1 tsp

    For Boba

    Brown sugar - 3/4 cup
    Water - 3/4 cup
    Boba pearls - 3/4 cup
    For Topping
    Butter - 2 tbsp
    Brown sugar - 1 tbsp
    Fruits of choice

    Method

    Add brown sugar to water, simmer, and make a syrup (boil for a couple of minutes once dissolved).
    Cook the boba pearls according to package directions.

    Drain the boba and add to the syrup and simmer for a couple of minutes. Set aside.

    Add brown sugar to butter, mix, and set aside.

    Add the whole wheat flour, brown sugar, baking powder, and salt to a bowl, and mix evenly. Add the milk, melted butter, and mix to a batter.

    Heat a pan, smear a little butter, add a scoop of pancake batter (about 6-in. diameter),cook for 3 minutes. When you see a lot of buubles on top, it is time to flip.

    Flip and cook for another minute. Set the pancake aside and repeat with the rest of the batter.

    Optional: Smear a little brown sugar butter in between each pancake while stacking.

    Stack three pancakes, add half the quantity of brown sugar boba mixture, top with brown sugar butter and serve warm. Add additional fruits as per preference.

      I must say these pancakes are terribly inviting ,Boba reminds me of Japan where I would enjoy them in my drinks. Boba on pancakes , surely sounds unique.
