This is a delicious, luscious, creamy, and indulging boba cream pie. This pie is made with a regular pie crust, cream cheese, cream, brown sugar, and of course brown sugar boba! Inside and on top. Yes the chewy delicious brown sugar boba is added to the creamy filling and on top of the pie. Did I say this is eggless? Yes, this eggless, no bake creamy boba pie will be the center of attraction when to set it on the table.
This recipe uses single pie crust. The recipe for the same is given here. Store-bought pie crust can also be used. Graham cracker crust can also be used as the base for this pie. The pie is delicious in both the ways.
As said before, this is an eggless, no gelatin, and no bake (no baking for cream layer) pie. To set the pie I have used agar agar powder. Unlike gelatin, agar agar powder dissolves when heated and tends to set when cooled. Agar agar cannot be soaked to give the gelling effect. I have used the cream to dissolve it.
For all boba lovers, this pie is a must try. We love boba and always experiment with it in many recipes. I will share them all soon. Brown sugar and boba is magical and this is fantastic in this cream pie. The top looks appealing and inviting while there is boba in each bite set insde the filling....the combination of all these makes it divine! I have used mini boba, but regular boba can also be used.
This is a crowd pleaser and needs a little planning as it needs 2-4 hours setting time. The boba can be added on top just before serving. So with right planning, make it and keep in fridge. When needed top with boba and serve if you plan to serve this for gatherings. Just try, this will be a great choice and you'd be happy that your guests loved it. The leftovers can be stored in refrigerator for a couple of days.

Ingredients
For the pie crust
All-purpose flour - 1 and 1/4 cup
Salt - 1/2 tsp
Sugar- 1 tbsp
Butter - 1 stick or 1/2 cup
Ice cold water - 2 to3 tbsp
For the Filling
Cream cheese - 2, 8-oz blocks
Whipping cream - 3/4 cup
Agar agar powder - 2 tsp
Brown sugar - 1/2 cup Plus 1/2 cup
Boba pearls, mini - 1/2 cup
Water - 6 cups plus 1/2 cup
Vanilla - 2 tsp
Lemon juice - 1 tbsp
Method
For the crust:
In a bowl, add the flour, salt, sugar, and ice cold butter. Using a pastry cutter, incorporate the butter and it should resemble a crumbly texture. Sprinkle about 2 tablespoon water and knead to a dough. Cover with a wrap and refrigerate for 1-2 hours.
Preheat the oven to 400 degrees F. Remove the dough from the fridge, roll into a 11-in circle.
Carefully transfer to a buttered 9-in pie plate. Use a foil to cover the pie and add beans or pie weights on top. This is to prevent the pie crust from pillowing up. Bake for 20 minutes.
Remove from the oven. Remove the beans or pie weights and foil.
Return the pie plate to oven and bake for additional 13-15 minutes or until golden brown in color. If the edges begin to darken, cover with a foil and continue to cook.
Set aside to cool.
For the boba:
In the meantime, bring 6 cups water to a boil, add boba and cook as per instructions on the package.
Make a simple syrup with 1/2 cup brown sugar and water, and bring it to a boil. Drain or scoop the boba, add the cooked boba. Simmer for 2-3 minutes. set aside to cool.
For the filling:
In a bowl, add the cream cheese, brown sugar, vanilla, lemon juice, and beat until light and fluffy. Add 1/4 cup cream and beat again.
Heat 1/2 cup cream in microwave for 40-50 seconds. Add the agar agar powder and whisk well for a minute and whish.
Add this to the cream filling and beat well. Add half the boba in brown sugar syrup and fold well.
Carefully fill the baked crust with filling.
Cover and refrigerate for 2-4 hours.
Just before serving add the reserved boba on top, slice and serve.
