    Celebration Cookie Pie

    This cookie pie has layers of cookie dough, Nutella Dulche de Leche, cream cheese, and cookie dough on top. Serve with a scoop of ice cream and drizzles of chocolate and caramel for the ultimate dessert. Generally for a pie, pie crust is used, but in this spin on the cookie pie, I wanted to have an eggless cookie base as the shell. This is a huge cookie pi!

    I have used Dixie Crystals granulated pure sugar for the cookie dough in addition to brown sugar to get the perfect chewy and crispy texture. Dixie Crystals is the best quality sugar and I love to use it in many recipes!
    This is called a celebration cookie pie for a reason. It has so many delicious and addictive ingredients that you'll love. It is like all of your favorites in one. Yes, Nutella, Dulche de Leche, cream cheese, and cookie dough are all my favorites (Ok, OUR favorites!) and when all these are included in one dessert, well, it is a celebration of flavors! And no denying that! A perfect treat! I have used a chocolate chip cookie base, sugar cookie can also be used. Play around with your favorite flavors.

    When making this pie, it is easier to spread Nutella and Dulche de Leche onto parchments and freeze. Spread the Nutella, freeze for a couple of hours and then spread Dulche de Leche on top of Nutella. In this way, it is easier to remove from the parchment and add it to the cookie pie base. Otherwise it will be a mess. Gooey Dulche de Leche and Nutella will be messy and getting a distinct layer will be impossible.If you try to make these two as separate layers, there is one problem. Dulche de Leche cannot be peeled from the parchment when taken out of the freezer. It just sticks. So the best way to make a clean finish is by spreading the Dulche de Leche on top of Nutella. Peeling is easier and just place the disc on top of the cookie base. Phew! Life becomes simpler! Trust me, been there and the delicious mistakes made help with perfecting the techniques.
    What I love about this pie is that it is shareable! Ok, all pies are shareable! This pie has so many sweet components in it, that it is easy to fall in love with it and empty it. But it is a great idea to share. The pie can be refrigerated for a couple of days, just warm for five minutes and serve. I haven't tried freezing this yet, as it is gone before I even think of it. Whether it is this pie or fruit based Lattice Top Strawberry Pie, I love to share with friends as they love the baked goodies and encourage my experimenting! 

    This pie can be served as such. It tastes divine! Everything gets better with a scoop of icecream. But this cookie pie becomes sinfully divine when a warm slice of drizzled pie I served with a scoop of vanilla ice cream and extra drizzles of chocolate syrup and caramel. Every bite is Heavenly! It is hard to stop eating this!
    Did you know that March 14th is Pi (e) Day! 3.14! Pi, π, is the ratio of a circle's circumference to its diameter. This formula is widely used in math and physics. There is a connection between pi and quantum mechanics, and the relationship was found when studying the  orbitals of hydrogen atom. Coming back to pi, the value of this pi is 3.14.....the digit continues. Rounded off as 3.14, matches with the date 14th March, and is celebrated as Pi Day and celebrate Pi Day with a PIE, which of course has a circumference and a diameter relating to pi and each slice can be quantified with pi! Try this Lattice Top Strawberry Pie for a fruit based pie or Mac and Cheese Pizza Pie for a cheesy one. But if you are an Indian street food lover, this Aloo Channa Paneer Pie is a MUST try and this has the flavors of samosa, kachori, and samosa chaat! Doesn't it sound perfect and delicious?

    Ingredients
    Makes 1 8-in. pie
    For the Cookie Layers
    Butter - 2 sticks
    Milk -1/2 cup
    Vanilla - 2 tsp
    Dixie Crystals sugar - 1/2 cup
    Brown sugar - 1cup
    All-purpose flour - 3 cups
    Baking soda- 2 tsp
    Salt - 1/2 tsp
    Chocolate chips - 2 cups
    From Cream cheese layer
    Cream cheese - 12 oz,room temperature
    Powdered sugar - 3/4 cup
    Vanilla - 1.5 tsp
    Nutella - 1/2 cup
    Dulche de Leche - 2/3 cup

    For drizzle (optional)
    Caramel sauce
    Chocolate syrup
    Method
    Mark the inner circle circumference of a 8-in springform pan onto a parchment. Spread Nutella within the circle, freeze for a couple of hours. Remove from freezer, spread Dulche de Leche on top and again freeze for a couple of hours.

    When the above is ready, preheat the oven to 350 degrees F. Beat the cream cheese, powdered sugar, and vanilla until fluffy and set aside.

    Make the cookie dough: Combine the dry ingredients. Beat the butter, milk, brown sugar, Dixie Crystals sugar, and vanilla until light and fluffy. Add the dry ingredients in two or three batches and make a dough.

    Fold in the chocolate chips, reserving about a quarter cup.

    Grease an 8-in springform pan and line the base with a parchment. Take about two-thirds of the cookie dough and spread on the base as well as the sides of the pan.

    Place the Nutella-Dulche de Leche disc on the cookie base.

    Add the cream cheese and spread evenly.

    Cover the top with the remaining cookie dough and spread evenly to cover and seal the cream cheese layer.

    Add the reserved chocolate chips on top.

    Bake for about 24 -25 minutes at 350 degrees F, until the top is set when touched and the edges are golden. Remove from the oven and cool.

    Add drizzles as desired. Slice, serve with a scoop of icecream and extra drizzles of chocolate syrup and caramel.
