    Gandana Waffle

    Gandana waffles are simple and tasty savory waffles made with Afghani leeks. They can be served with yellow lentil stew and or yogurt. They make absolutely comforting brunch or dinner. With chive flavor, these waffles are great with soups too. 



    There is farm near my home where they have these gandana and out of curiosity I asked them what it is. I go there often as they have fresh veggies from the farm and have some u-pick options too. They gave me a sample and said that it is used in making Afghani stuffed bolanis and dumplings. Ever since, we love this, and often buy it from the farm. The are thinner than regular leeks and can be used as a substitute for chives.

    My recipe is inspired by Afghani aushak and mantu. Aushak is steamed gandana filled dumplings served with garlicky yogurt and meat sauce. Mantu is meat dumplings served with yogurt sauce. Since we like the chive flavored gandana, we often include that in our parathas and dosa. I made pancakes and waffles with them and they were delicious. Instead of using all-purpose flour and making dumplings, I started to use them in whole wheat based meal options.  Instead of stuffing making the laborious dumplings, just add them in the batter and make these easy and quick waffles/pancakes. For a crisp one make it in setting 4 or 5 in your waffle. They taste amazing and satisfying. Serve them with yellow split lentil stew (vegetarian option instead of meat) and yogurt to make a perfect meal. Plus this is made with whole wheat and hence more nutritious. This a vegan waffle and serve with lentil stew and skip yogurt or use plant based yogurt for a vegan meal. They are great with coconut chutney too!

    Ingredients
    Makes 3 waffles
    Whole wheat flour- 1 cup
    Aquafaba - 4 tbsp
    Water -  1 cup plus 2 tbsp
    Salt - 1/2 tsp
    Gandana - 3/4 cup, chopped
    Pepper powder - 1/2 tsp
    Oil - 2 tbsp

    Method

    Add everything and make waffle batter.

    Preheat the waffle iron and make waffles. I use in setting 4.

    Serve hot with lentil stew/ yogurt.

      I don't think we have gandana here but I have tons of chives in my garden that I can substitute.

      Gandana is a new vegetable to me, but I am going to seek them out. In the meantime I might use a combination of the leeks and chives I have on hand.
