    This pudding has the perfect balance of taste and nutrition. The creamy coconut milk offers richness and healthy fats, while chia seeds are tiny nutritional powerhouses-rich in fiber, omega-3s, and plant-based protein. Berries add a naturally sweet, tangy pop along with antioxidants.

    Ingredients for coconut chia berry pudding

    This simple recipe needs few minimal pantry staples like:

    Coconut milk - creamy and nourishing, flavorful! You can use almond, soy, or any plant based milk, the flavors may vary slightly.

    Chia seeds - these are rich in fiber, omega - 3 fatty acids, protreins.

    Maple syrup - natural sweetener

    Water - to soak the seeds

    Fruits - This recipe uses common fridge/kichen staple fruits like bananas, strawberry and blueberries. You may use any fruit toppings can be used.

    You may also add toasted granola or nuts as it gives a great crunch.

    Serving Suggestions

    I serve this chilled during summer and makes a delightful breakfast! You may serve at room temperature too. This is also great to serve to guests as a healthy breakfast, snack, or as a dessert. Just layer it in a jar and that elevates the experience!

    Ingredients

    • ¾ cup Coconut milk 
    • 1 cup Water
    • 2 tbsp Maple syrup
    • ⅓ cup Chia seeds
    • Fresh blueberries 
    • Fresh strawberries 
    • Banana slices 

    Instructions

    • In a bowl add the coconut milk, maple syrup, and water. Add the chia seeds and mix well. Set aside for 20-30 minutes or overnight in the fridge.
    • In the meantime prep the fruits to be topped. In each serving cup add 1/6th of the portion. Add chopped strawberries and blueberries. 
    • Serve immediately.

      Chia seeds are so good for you! I've put them in smoothies, but not made a pudding with them. Adding the berries makes it even healthier and full of nutrition.
