    Maggi Sandwich

    Maggi Sandwich is a street food from Mumbai. Mumbai street food is famous all over and every flavor  possibility can be found as an option in the streets of Mumbai. Simple foods get easily transformed giving a new dimension to the existing food ingredients. This Maggi Sandwich is one like that. 
    A sandwich and Maggi noodles are both comfort foods and when they are fused together - it is fabulous. This is a must for Maggi lovers. This is quick to make as most of have these chutneys in fridge for making quick fixes. The flavors from the chutneys, Maggi and the crunch from the veggies - it is a happy marriage. Adjust the amount of chutney that you spread on the bread according to your preference. I like a spicy version and had a little extra in mine but for my kids, had the spread a little less. This is a satisfying happy meal.

    Ingredients
    Makes 3 sandwiches
    Bread slices - 9
    Cheese - grated
    Cabbage - 1 cup, finely shredded
    Bell peppers - 1/2 cup, thinly sliced
    Onions - 1/2 cup, thinly sliced
    Carrots - 1/2 cup, thinly sliced
    Maggi noodles - 1 and 1/2 pack
    Chaat masala 
    Butter - 3 to 4 tbsp, room temperature
    Cilantro -mint chutney - a couple of tbsp
    Red chili -garlic chutney - a couple of tbsp
    Method
    Cook the Maggi according to package directions and set aside. Mix the vegetables and set aside in a bowl. Preheat the panini press at 375 degrees F.
    Take three slices of bread and butter one side in each slice. Spread green chutney on one slice and chili garlic chutney on the other two. Add the 1/6th of the veggies on one green chutney and red chutney spread slices. Sprinkle chaat masala. Add 1/6th of the Maggi. Grate cheese on top of Maggi. To assemble, stack the two slices with all the added ingredients one on top of the other. Invert the other slice with red chutney on top of the stack. Repeat with the other slices of bread to make sandwiches.

    Once the panini maker is ready, keep the prepared sandwich and toast till crisp on outside, 2-3 minutes. 

    Sprinkle extra shredded cheese on top and serve immediately.
