Boxty is traditional Irish pancakes. They are just delicious. There are variations for the boxty recipe, just like any other recipe. But addictively delicious end results can only be attained. Isn't that great! This is similar to the grated potato rosti that we love. We have so many variations of street food centering potatoes. So right away boxty and other potato cakes find way in our plates. Boxty makes a great weekend brunch. This can be served with butter alone or with some spicy sauces if you prefer.
I served them with some sautéed beans, grilled tomatoes, fruits, and tea for a perfect brunch.
Depending on whether you use, griddle, or pan, the name might also vary. Traditionally, half the potatoes are cooked and mashed. Half of them grated. Buttermilk, salt, and flour are added, mixed and pancakes are made with butter. I adapted the recipe from the book, The Irish Cook Book by Jp McMahon. This is absolutely divine and yum. Cilantro and/or green onions can be added too if you want some variations. I used two good sized russet potatoes. Russet potatoes are great and retain the shape and hence they give a tasty boxty.

Ingredients
Makes 14-16
Potatoes - 2 cups, grated
Potatoes - 2 cups, cooked and mashed
All-purpose flour - 2 cups
Buttermilk - 1 cup
Salt - 1 and 1/2 tsp
Butter - 2-4 tbsp
Baking powder - 1 tsp
Method
Boil the potatoes, peel and mash. Rinse the grated potatoes, squeeze out the water. Add the mashed potatoes, grated potatoes and buttermilk in a bowl and mix thoroughly.
Add salt, baking powder to all purpose flour. Add the potato mix and combine thoroughly. The batter will be thick.
Heat a cast-iron pan. Add a little butter. Scoop 1/4 cup of the batter and spread to a 4 or 5 -in pancake. Cook for 3-4 minutes. Flip, add a little butter and cook for another 3 minutes. Repeat for the rest of the batter.
Serve hot with butter on top.
