Gromperekichelcher, from Luxembourg, is fried potato snacks. I read that they are sold in fairs and Christmas markets as snacks. It is street food, a delicious one. A potato-based snack and deep-fried, I know everyone will love it. Serve them warm with apple compote like in Luxembourg or with ketchup or chutney. I followed Anne in her Anneskitchen. She comments that 'Gromperekichelcher is the highlight of the annual ‘Schueberfouer’, a massive funfair that pops up in the city for three weeks, with rollercoasters, fun rides and lots of street food.' Her recipe calls for an egg and I modified it to make an eggless version. Also, she made 4 but I reduced the size and made 8 out of it which helps in portion control too.

In addition to the potato fritters, gromperekichelcher, I tried the Luxembourgish doughnuts, verwurrelter. I made an eggless version, it was good but still needs more improvements. My son loved it. Bouneschlupp (bean soup) is a lovely simple soup. I am yet to try Quetschentaart (plum tart) and Ietsebulli (green pea soup, vegetarian version) and would try them sometime.
Ingredients
Makes 8
Potatoes - 2.5 cups, grated
Onions - 1/2 cup, grated
Salt - 1/2 tsp
Rice flour - 2 tbsp
Oil - 3 cups
Method
Add the grated potatoes, onions, salt, flour, and parsley. Mix and set aside for 30 minutes. Mix as water would have collected at the bottom. Divide into 8 portions. Heat oil in a pan. Slightly flatten each potato portion and fry 3-4 minutes on each side, till golden brown. Drain excess oil.
Serve immediately.
