This is my take on the ragada patties chaat, a classic Indian street food. Instead of using traditional potato patties, this mouth-watering chaat recipe uses baked potatoes. This not only saves some active cooking time making the patties but also adds a tasty flavor profile without compromising the traditional comfort you get from ragada patties chaat.

This is totally customizable. The toppings can be added from 1 tbsp to 5 tbsp per serving, as per preference to keep the chaat mild or spicy. For milder version use more sweet chuney and increase the mint chutney for more bolder flavors. You can use homemade or store-bought sauces/chutneys. I prefer making them fresh as it is easier but if you prefer to keep life simple, you can use premade chutneys.

To make this tasty baked potato ragada chaat, you will need the following ingredients:

Russet potatoes - meaty potatoes are a must to make this fusion chaat.

Dried yellow peas - protein rich peas give the comfort and satisfy hunger.

Salt - gives flavor

Onion, ginger, garlic - these add aroma and characteristic flavors to the ragada or yellow peas gravy.

Tomatoes - enhance color and flavor

Spice powders - turmeric, chili powder, cumin powder, coriander powder, and garam masala impart deep and authentic flavor to the gravy.

Toppings - green chutney, sweet tamarind dates chutney, sev, onions, cilantro are great toppings. You can also whisk yogurt and drizzle it.

This recipe uses dried peas, you will have top plan ahead as it needs soaking time. Instead, you can quick soak by adding it to boiling water and soaking them further. I often soak the beans, drain and freeze them. In this way you will always have some protein rich beans ready to be used in any recipe.

Serving Suggestions

This recipe uses medium sized russet potatoes. As a snack, each potato can easily be shared by two persons. This is great to serve as a meal too. Sometimes, I make this for an early dinner on weekends like a big snacky dinner.

This is great to serve for parties too! Just use very small or baby russets to bake. Keep this mind whileplanning the portion size whenserving for a large crowd.

Meaty potatoes and protein rich peas make this a very filling one. I use the size of the potatoes and the quantity of the ragada as a pointer to help in deciding the portion size.

Storage

Leftovers, if any, I store in the refrigerator for a couple of days. You can reheat and then assemble the chaat.
