Samosa chole chaat is a delicious street food with different sauces as toppings. This pizza brings the exact flavors that you would love on your chaat. The pizza is baked samosa filling sprinkled all over the pizza with chole curry as sauce, and baked, and served with a delicious drizzle of mint and sweet chutney, and sev.
The crust of this pizza is special. The added carom/ajwain seeds add to the flavors of Indian chaat like kachoris. The crust of the pizza is slightly on the thicker side. This pizza is loaded with heavy sauce and toppings and a thicker base perfectly holds all of the toppings and sauces. Thinner crust would make it floppy.
Samosa is a delicious deep fried potato stuffed snack with an all-purpose flour crust. The samosa filling made with mashed potatoes and aromatic spices is so delicious that you could as well gobble it up as such. The samosa filling is sprinkled all over the pizza. This is similar to Potato Pizza only that it has added aromatic spices. This samosa filling is also versatile to add in many delicious recipes like Puff Pastry Samosa Pinwheels, Crescent Roll Samosa Wreath, Lavash Samosa Chaat Roll, Samosa Mummies, Samosa Muffins.
A thicker version of chole, a garbanzo bean curry, is spread as sauce and it is a chunkier one. I prefer a chunkier version as this gives a textural bite. Based on your preference, some of the garbanzo beans can also be mashed in the sauce. Garbanzo beans also provide protein.
Finely chopped onions are mostly added in many chaats, and so I have used sliced onions to purport the same experience. Tomatoes may also be used.
The mint chutney, sweet tamarind dates chutney, sev (a thin noodle like crunchy deep fried snack made with gram flour), chaat masala (a spice mixture that has piquant flavor) are delicious toppings that are drizzled on any chaat. These can be homemade or store-bought. The thin sev and pomegranate are optional. Pomegranate adds to the vibrant colors and a sweet bite here are there. It is possible to customize these toppings based on individual preferences. A final sprinkle of freshly chopped cilantro notches up the aroma and flavor.
For variations, the pizza can be made in the traditional circular shape too. I preferred the sheet pan version for this loaded pizza, as the square slices give extra support to hold the heavy toppings.

Thai chili - 1, finely chopped
Cayenne - 1/4 tsp

Cilantro - 1 tbsp, finely chopped
Dry mango powder - 1/4 tsp
Black salt - 1/4 tsp
For Chole Sauce
Garbanzo beans - 1.5 cups, cooked
Salt - 1/2 tsp
Turmeric - 1/4 tsp
Cayenne - 1/4 tsp
Chole masala powder - 3/4 tsp
Onion - 1/2 cup, chopped
Tomato purée - ⅓ cup
Water - ⅓ cup
Cumin - 1/2 tsp
Oil - 1 tbsp
Ginger - 1 tsp, finely chopped
Garlic - 1 tsp, finely chopped
Cilantro - 1 tbsp, finely chopped
Dry mango powder - 1/4 tsp
Black salt - 1/4 tsp
Toppings
Mozzarella cheese - 1 cup shredded or 6-8 cheese sticks.
Onions - ½ cup, sliced
Mint chutney - 2 tbsp
Sweet tamarind chutney - 2 tbsp
