Beetroot Hummus
Ingredients
- 1 14-oz can Garbanzo beans Drained, rinsed
- 1 cup Roasted Beets chopped
- 2 tbsp Tahini
- 2 cloves Garlic
- ½ tsp Cumin powder
- ¾ tsp Cayenne
- 2½ tsp Lemon juice
- 1 tsp Salt
- ½ tsp Black pepper
- ¼ cup Olive oil
Optional drizzle
- 1 or 2 tbsp Olive oil
- 1 clove Garlic minced
For Garnish
- 1 tsp Parsley chopped
- 1 tsp Dill chopped
Instructions
- Soak the garbanzo beans for 8 hrs. Cook until it is soft. Remove the skin from the cooked beans (optional) for smooth hummus texture.
- Add everything(reserving olive oil) to the food processor, process it until smooth drizzling the olive oil. Transfer to a bowl, garnish with parsley dill. Add optional drizzle of garlic olive oil. Serve with veggies and chips/bread.
- Optional garlic oil drizzle: Heat oil in a pan, add the garlic and saute for 40-50 seconds without browning. Cool and drizzle on top of hummus.
