    Hot cocoa cookies

    These chewy and delciious cookie are made using hot cocoa mix. Who doesn't love hot cocoa? When the same flavors are there in the cookie, It is going to be loved and devoured. This eggless cookie is a perfect cookie to keep for Santa with a glass of milk. These are amazing snacks and edible gifts too!

    Hot cocoa mix add to the flavor of the cocokies. The rich chocolate flavor from the hot cocoa to cookie makes a great transition. Plus, the mixes also have a few ingredients like milk powder which add to the creaminess. These make cookies extra delicious. I always have hot cocoa packets on hand as my kids love to have this is in the morning as the weather changes to cold mornings. This makes mornings a breeze and also helps in making some goodies like these cookies. Plus, with added chocolate chips and marshmallows, this is a hot cookie!

    This cookie is perfect to have as such, or with hot cocoa, or milk. My kids and their friends gobbled up these as soon as they were out of the oven. With a glass of milk, makes a great snack for kids. This cookie is a perfect combo that it is a great choice to keep these ready for Santa - he too needs tasty hot cocoa (cookies)!

    Ingredients
    Makes 24 cookies
    Dry ingredients
    All purpose flour - 1.5 cups
    Salt 1/4 tsp
    Baking powder - 1 tsp
    Baking soda - 1/2 tsp
    Hot cocoa packet -2
    Wet Ingredients
    Butter - 1 stick or 1/2 cup
    Brown sugar - 1/2 cup, packed
    Vanilla - 1 tsp
    Flax seed powder - 1 tbsp
    Milk - 1/4 cup
    Add ins 
    Chocolate chip - 1/3 cup
    Vegan marshmallows-1/3 cup
    Method

    Add milk to flaxseed powder and set aside to gel.
    Add the dry ingredients to a bowl, mix and set aside. Preheat the oven to 350 degrees F.

    In another bowl add butter, brown sugar, vanilla, flax seed and beat until light and fluffy.

    Add the dry ingredients mix slowly and make a cookie dough. 

    Fold in the chocolate chips and vegan marshmallows.

    With a cookie scooper, place scoops of cookie dough about 2-in. apart on a silicone lined baking tray.

    Bake for 11 minutes, or until the edges begin to firm. For a crispy one, bake a minute more. Remove from the oven, cool. 

    Stroe in an airtight container until served.
