    Spanakorizo

    This is a simple, easy to make, comforting Greek spinach rice. This vegan one-pot meal is great not only for a quick delicious meal but also is a perfect side for spring. This can be served with vegan feta and yogurt or regular versions of feta and yogurt.
     

     

    Can you imagine a bowl of comfort food to sit with your family and enjoy a quality time on a weeknight? This spanakorizo will fit in. Every bite of this starch rich rice, flavors of spinach, aroma of dill, and the tang from lime juice/lemon zest is heaven! This quick meal also nourishes you.

     

     

     
     

    Why should you make Spanakorizo?

     

     

    • Spinach is healthy and this is a great idea to add spinach in your diet.
    • This one pot meal is an amazing choice to make for weeknight or weekend. 
    • This is SO delicious and easy to make.
    • This is comfort food.
    • This can be a great side too.

     

     

    The ingredients needed to make this are:

     

    Rice - of course, rice is one of the stars in this recipe. Basmati or Sona Masoori, or long grain rice can be used for this recipe.

     

    Spinach - This is the other star of this recipe. This nutrient rich green makes a flavorful meal along with rice. 

     

    Dill - Fresh dill leaves add to the aroma and flavor of the rice and are not to be missed. This herb adds tons of flavor.

     

    Lime juice - The lime juice elevates the flavor. Lemon zest can also be used. 

     

    Salt - adds flavor.

     

    Onion and garlic - adds tons of flavors

     

    Black pepper - adds flavor and heat to this dish.

     

     

    How to serve this dish?

     

    This rice can be served as such. This makes the most comforting meal. Nothing else needed. But this can also be served as a side too. Now spinach is in season, and make this for your spring parties. Crumble a little feta on top for extra deliciousness, and the flavor combination becomes phenomenal. This rice is great with plain Greek yogurt or with tzatziki too. Sometimes when I do not have these options, a few chips on the side makes a comforting meal.

     

     

    Things to note…….

     

    While making this rice, it is important to have the rice nice and fluffy, and not mushy. I have used regular rice, basmati rice can also be used. Sticky rice may not work in this recipe.

     

    What variations can be made?

     

    This is a rice based recipe. If you are conscious about rice, quinoa can also be used. The cooking time and water needed slightly varies. Instead  of water, broth can also be used to enhance the flavors. 

     

    If you love spinach………

     

    Spinach is versatile to use in many recipes. Potato and Spinach soup is perfect for cold winter nights.     Ingredients 
    Serves 4
     
    Rice - 1 cup
    Spinach - 6 cups, packed, roughly chopped
    Onion - 1/2 cup, sliced 
    Garlic - 1 tbsp, finely chopped
    Salt - 1 tsp
    Water - 2 cups
    Black pepper powder- 3/4 tsp
    Dill leaves - 3-4 tbsp, chopped
    Lemon juice - 2 tbsp
     
    Method
     

    Heat oil in a pot on s medium flame and add the onions and garlic. Cook for 4-( minutes till onions turn translucent.

     

     

    Add the spinach and cook this down, till alm the leaves are wilted a little. This may take about 3-5 minutes.

     

     

    Add the rice, salt, water, and black pepper powder. Mix and bring to a boil.

     

     
    When more than 90% of the liquid is absorbed by the rice, lower the flame, cover and cook for 12-15 minutes.  

     

     
    Add the lemon juice, fluff and serve.

      What a great comfort food dish. It would make a great weeknight dish. I can see that with the addition of a bit of feta cheese and yogurt you could eat it as a meal by itself. My kind of dinner!
