    Dorayaki

    Dorayaki is a traditional Japanese sweet made with red bean paste filled inside honey pancakes. This is one of the sweet treat you can say no to. This is an eggless recipe using aquafaba.

    The red bean paste with the honey pancakes tastes amazing. I guarantee that it is hard to stop with one. It is easier to make bite sized too to serve as treats in parties. The red bean filling is very similar to our Puran Poli filling made with chana dal. Also we make a sweet and salty stir-fry with adzuki bean in our home and is a traditional one. So the flavors of this pancake filling reminds of our food and hence always loved in our home. I made my own red bean paste but store-bought ones work too. Since it is a pancake sandwich, it would be a great idea to use a standard amount of batter for uniform sized pancakes. 
    I followed my recipe from Chopstick Chronicles and made some changes to make a eggless one. This recipe uses aquafaba for eggs and gives the perfect fluffiness to the pancakes. Traditional recipe uses mirin and I have substituted with rice vinegar. The added honey gives a perfect taste and enhances the sweetness of the treat. These are the changes I made. To make it vegan use maple syrup instead of honey.

    My niece loved to watch Doraemon when she was young and whenever I hear the name Dorayaki, I always remember her childhood face and the way she was happy to even hear the name Doraemon. When I was reading, I found that Dorayaki is Doraemon's favorite snack! Great right! I tried even the wholewheat version and loved it too. Olympics are always fun and used to watch them from my childhood days. Since the Summer Olympics is being held in Japan, I wanted to try a recipe from the host country. I try to veganise many recipes from the Japanese cuisine. We love Japanese curry and the Japanese Steamed Curry Buns are our favorite.

  • Ingredients

    Makes 5 sandwiches
    All-purpose flour - 1 cup
    Baking powder - 1 tsp
    Honey -1 tbsp
    Rice vinegar - 1 tbsp
    Aquafaba - 6 tbsp
    Water - 2 to 3 tbsp
    Sugar - 1/2 cup
    Adzuki bean paste - 10 tbsp
    Method
    Mix the flour with baking powder.
    Beat the aquafaba well till it is a little pale. 
    Add honey, rice vinegar and beat. 
    Fold in the flour. Cover and refrigerate for 30 minutes.
    After 30 minutes, add water and make to a batter.
    Heat oil in a pan and use a scoop to make same size pancakes. Cook for 4 minutes on each side. Repeat with all of the batter.

    Place about 2 tbsp of red bean paste and make a sandwich with pancakes. 
    Repeat with all the pancakes making sandwiches. 
    Serve immediately or wrap them tightly and store.

      This dorayaki made such a great meal for the whole family! The honey pancakes were a hit! The red bean paste complimented the pancakes quite nicely without taking over the flavor completely. So delicious!
