    Mushroom Ragada Patties

    This is lip-smacking, vegan, scrumptious snack as well as starter that will please any crowd. With Big Mountain Foods Mighty Mushroom Bites, it is a breeze to make these and are low in carb too! Protein rich and satisfying food can easily become a frequenter in your menu! Drizzled with lip-smacking piquant chutneys, this is a deliciousone to devour.
    Chaat is a flavorful food as well as street food with piquant and refreshing flavors. The mint chutney and sweet dates chutney along with a sprinkle of chaat masala will make anything addictive and elevates the flavor profile exponentially! Sev are thin deep fried garbanzo flour snack shaped like sticks or thin noodles, and vegan too. The chutneys, sev, and chaat masala can be made at home or can be bought in Indian groceries.  Hot and Sweet Cranberry Dates Chutney can also be used in place of sweet dates chutney. 
    Chaat is also easily customizable and can be easily made vegan. Most of the vegetarian chaat foods are vegan other than if you request for yogurt. So, there are multiple flavors to make vegan chaat and this vegan ragada mushroom chaat is one among them!
    Traditional ragada patties are made with potato patties and a curry made with yellow peas. As much as the potato patties are yummy, they are also high in carbs. With this Big Mountain Foods Mighty Mushroom Bites, there is way to reduce the carb load and make even more protein rich chaat.     Since the patties are already ready, it saves time and helps in making the chaat easily with the ready to use patties. These mushroom bites are made with shiitake and white mushrooms with yellow split peas and veggies. Sweet potatoes,spinach, and carrots are in the patties making it very nutrotious. Easy way to sneak veggies with these patties even to a picky eater. The chaat made with these patties are rich in nutrient profile!

    Dried yellow peas are soaked and cooked with aromatic spices to make the curry style gravy for the chaat. So plan on time to allow 5-6 hours soaking time. If you are in short of time, use canned garbanzos in place of peas for a quick one. Works perfectly great! Just simmer for 15 minutes for the curry to be ready. 

    Assembling the chaat is very easy. In serving bowl, add the yellow peas, add a patty, top with chutneys, onions, cilantro, and sev. The given measured quantity can be served with eight patties or servings, but if more of the yellow peas gravy/curry is used per patty, the following measurements will work for six serving. The toppings and yellow peas can be added as per preference and the guests can also make their own bowls, making it even more fun! They can add the toppings as they wish.

    Vegan Baked Potato Ragada Chaat is a similar chaat made with baked potatoes. The baked potatoes replace the potato patties. Street foods are rich in many flavorful foods. This healthy, vegan Peanut Salad/Peanut Chaat is a family favorite!

    Ingredients
    Serves 6 to 8
    For the Patties
    Big Mountain Foods Mighty Mushroom Bites - 6 to 8
    Oil - 1 tbsp
    For the ragada
    Yellow peas - 1 cup
    Water - 3cups, plus soaking
    Salt - 1 and 1/4 tsp
    Turmeric - 1/3 tsp
    Chili powder - 1 tsp
    Cumin powder - 1/2 tsp
    Garam masala - 3/4 tsp
    Coriander powder - 1/2 tsp
    Onions - 3/4 cup, chopped
    Tomatoes - 1.5 cup, chopped
    Garlic - 1 tbsp, chopped
    Ginger - 1 tbsp, chopped
    For assembly
    Onions -1/4 cup, finely chopped
    Cilantro - 1 tbsp, chopped
    Chaat masala
    Fine sev
    Green Mint-cilantro chutney
    Sweet tamaring dates chutney

    Method

    Heat oil in a pressure cooker. Add the cumin, ginger, and garlic. Saute for 40 seconds. Add the onions and cook for 3-4 minutes, until onions turn translucent. Puree the tomatoes and add to the pan. Cook for couple of minutes.
    Add the soaked peas, followed by salt, turmeric, cayenne, cumin powder, coriander powder, and garam masala.Add water. Mix.

    Pressure cook for three whistles. Alternatively, this can be cooked for 4 minutes (high pressure mode) in Instant Pot too. Once the pressure is released, gently mix the contents. Check and adjust the salt and cayenne as per requirements. Add a little water if needed to adjust consistency. 

    Heat a pan on medium flame. Drizzle oil and cook the patties 2-3 minutes each side flipping ones. Repeat with remaining patties if making in bateches. 
    To assemble: Add about half cup of the yellow peas to a cup. Add the toasted Mighty Mushroom Bites Patties. Sprinkle a little chaat masala, mint chutmey, sweet date tamarind chutney, chopped onions, sev, and cilantro. Serve immediately.
