    This zero oil veggie and millet noodle soup is a simple, healthy, nutritious, comforting soup that has the perfect taste. This soup supports you to stand by your New Year resolutions towards a new and healthy you!

    Why this soup?

    This is a very healthy soup perfect for the weather. The brothy soup filled with veggies and some millet noodles makes a wholesome and nutritious soup. Did I tell you that this is zero oil soup? Yes, no oil to butter! Zero fat soup! This soup is vegan too!

    After the festivities and the calorie overload, you need this detox soup to get back to your shape and routine. This will be the best detox soup for you. Simple and quick to make, yet tasty and satisfying.

    The immense favor is attributed to garlic, ginger, green onions, cilantro, pepper, and lime (of course salt too). This simple soup can rejuvenate you! A perfect detox soup! Whether you are sick, or getting better, or fit, this soup is perfect for any meal. This helps you cut down your body fat and thus light and heart healthy.

    This soup is versatile as you can add tofu, lentils or other proteins. Or you may add whatever veggies you might have or the seasonal veggies that you can find locally.

    In a nutshell, this soup is a healthy, nutritious, and easy soup with customizability to help you reach your health goals for this year and for many more years.

    Ingredients for zero oil veggie and millet noodle soup

    You will require the following ingredients to make this delicious soup:

    Millet noodles - Millets are a healthier alternative and have low glycemic index. This recipe uses kodo millet vermicelli and with just soaking in hot water, it gets ready. I added them in the soup as the last addition. With one minute simmer, it was perfect! 

    Thai chili and Black pepper - The heat comes from the black pepper and chopped Thai green chiles. You may adjust the chile pepper based on your spice tolerance.

    Green onions, Ginger and Garlic - These aromatics flavor the soup.

    Salt - gives flavor.

    Water - to cook as well as forms the broth.

    Veggies - this recipe uses common veggies like beans, carrot, cabbage, and bell pepper. However, you may add seasonal veggies of your choice that will also cook quick.

    Is this easy to make?

    This nutritious soup can be prepared easily. All it takes is at the maximum 15 minutes cooking time and 15 prep time, that is cutting veggies. Cabbage, bell pepper, and carrots are easy to chop and provide excellent nutrition. Bring a pot of water to boil and start chopping. This could save a few minutes of time while making this soup. Or you could use a coleslaw pack to cut down chopping time.

    Can I use a different noodle?

    I recommend using millet noodles. Any millet noodles like kodo, barnyard, foxtail, pearl millet, any of them will work. If you can't find millet noodles, replace them with thin rice noodles, the flavor and nutrition profile may vary though. 

    Millet and rice noodles cook very quickly. So the procedure is the same. You can also use quinoa vermicelli. If you are using thicker noodles adjust the cooking time and consistency. 

    If you do not have any of these, replace with thin flour noodles and adjust cooking time accordingly. This soup will be very delicious! However, the nutrition profile will be completely different.

    Serving Suggestions

    While serving add a few slices of Thai chiles and some ginger slices for extra flavor boost! Serve with optional lime wedges to adjust taste.

    Zero Oil Veggie & Millet Noodle Soup

    This zero oil veggie and millet noodle soup is a simple, healthy, nutritious, comforting soup that has the perfect taste.

    Ingredients

    • 5 cups Water
    • 1 tsp Garlic  chopped
    • 1 tsp Ginger chopped
    • ¾ cup Carrots grated
    • ⅔ cup Bell pepper  sliced
    • 1 cup Cabbage sliced
    • ½ cup Green peas fresh or frozen
    • 1½ tsp Salt
    • 2 Green Thai chili finely chopped
    • 1 tbsp Lime juice
    • 2 Green onion sliced
    • 2 tbsp Cilantro finely chopped
    • ⅔ cup Kodo millet noodles

    Instructions

    • Add the green beans,ginger, garlic, green chili, white parts of green onions to two cups of  water and boil for 2 minutes.
    • Add the cabbage, bell pepper, carrots, peas, remaining water, salt, and pepper. Simmer for 2-4 minutes until the veggies are crisp tender.
    • Add the millet noodles and simmer for a minute. Gently mix the noodles around when adding so that they do not clump.
    • The millet would soak up and cook pretty soon.
    • Add the lime juice, green onions, and cilantro.
    • Ladle into bowls, garnish with extra cilantro, green onions, sliced ginger and Thai chile. Serve with a lime wedge too!

      I've never heard of millet noodles. I've had millet, but not the noodles. I'll have to see if my international grocery store has them. This soup looks hearty and oh so warming for this cold weather.
