    Eggless Pear Almond Mini Loaves

    This pear and almond bread can elevate your morning to a next level and is an amazing snack or dessert too. This eggless recipe uses aquafaba, Pears, almond powder, and the best T&C Almond Extract Paste and Vanilla Bean Paste.

    Pears are an amazing fall fruit and they are beast as such as well as in many recipes. I have used the pears Melissa's Produce gave me as samples. They were simply amazing in taste - best pears. Addin to that is a Dixie Crystals Pure cane sugar which helps sweeten the loaf and is of an amazing quality. Finally, the vanilla bean paste and Almond Extract Paste from Taylor and Colledge were incredible. Loved the aroma and flavor it imparted to the bread and they have become my new favorites. This is one of our favorite loaf. I am whipping up a couple of favorite recipes with those.
    This is an eggless recipe and perfectly suitable for people with egg allergies. I have used almond meal and also some almond flakes on top. Pear, almonds, and ginger are an amazing combo!     Ingredients
    Makes 8 mini loaves
    Pear - 1 and 1/2 cup, chopped
    Almond flour - 3/4 cup
    T&C Almond extract paste - 1/2 tsp
    T&C Vanilla bean paste - 1/2 tsp
    All-purpose flour - 1 and 1/4 cup minus 1 tsp
    Corn starch - 1 tbsp
    Ginger powder - 1/2 tsp
    Baking powder - 1 tsp
    Baking soda - 1/4 tsp
    Dixie Crystals Sugar - 3/4 cup
    Butter - 8 tbsp, room temperature
    Aquafaba - 4 tbsp
    Milk - 2 tbsp
    Method
    Preheat the oven to 350 degrees F. Add the dry ingredients to a bowl, mix, and set aside.

    Add the butter, sugar, aquafaba, and milk and beat till light and fluffy.

    Add the Taylor and Colledge Vanilla Bean Paste and Almond Etract Paste. Beat again to mix well.

    Add the dry ingredients in bateches and beat well to make a unifor, smooth mixture.

    Fold in the chopped pears.

    Transfer to a lined mini loaf pan. Topp with sliced almonds.

    Bake at 350 for 20-21 min. Remove from the oven, cool. Serve with tea or coffee for breakfast, or as a snack, or as a dessert.

      I’ve never tried pear in a loaf before, it was so good! It had such a good season taste to it, and so fun that the recipe made about 8 mini loaves!
