    Pol roti is a simple and tasty flatbread made with flour, freshly grated coconuts, onion, and green chili. This vegan roti can be served for breakfast, lunch, or dinner.

    About pol roti

    This pol roti is an unleavened flatbread, a staple bread in Sri Lanka, and is also a street food. Pol in Sinhalese means coconut and this flatbread gets its name as it is a flatbread made with coconut.

    The soft and delicious coconut flavored roti with a bite of spicy green chili here and there gives an ultimate experience and makes the morning great. Once you start great, the entire day will be great. Try this for breakfast and you'll see the change.

    With its soft texture and flavors from coconut, onions, and green chile, this bread is a pleaser. It is easy to make a spread with this roti making a scrumptuous meal with less effort.

    Ingredients

    To make this pol roti, you will need the following ingredients:

    Flour - All purpose flour is used to make this roti. Substituting with whole wheat gives a slightly different flavor and texture.

    Coconut - Fresh grated coconut works best. Alternatively, you can use frozen shredded coconut after thawing. Adding more coconut gives extra soft rotis.

    Green chilies - this gives the spicy bite here and there.

    Salt - gives flavor.

    Water - to knead the dough.

    Onions - I have used red onions. This adds to the textural bite as well as flavor of the rotis. 

    Oil - to cook the rotis. This adds to the softness too.

    What to serve with Pol Roti?

    I serve this pol roti with chilli sambal or Lunumiris. I love to have these as such for a quick snack too. Pol sambol is yet another great side to serve with this roti. You can also serve this roti with any curries like Sri Lankan Dal or Sri Lankan Deviled or Spicy Potatoes.

    Is this roti vegan?

    Yes, this roti is vegan. However, if the vegan version is not preferred, you can cook the roti in butter instead.

    Is this roti spicy?

    This roti is not very spicy. I would say low to medium. Adjust the amount of green chilies as per heat preference. Some red chili flakes may also be added to amp up the heat.

    Storage

    I stote this pol roti at room temperature if I plan to empty all of them the same day. You can store this in the refrigerator for a couple of days for extended shelf life. Reheat on a pan and serve.

    Pol Roti

    Ingredients

    • 2 cups All purpose flour
    • 1 cup Coconut grated
    • 1 cup Onion finely chopped
    • 1 tsp Salt
    • 1 Green chili chopped
    • ¼ cup Water
    • 1-2 tbsp Oil

    Instructions

    • Add the flour, coconut, salt, onions, and green chilies to a bowl.
    • Sprinkle water as needed and knead to a dough. Cover and rest for five minutes.
    • Divide the dough into nine portions. On a flat oiled surface/aluminum foil, gently roll each portion of the dough into a disc of 7 to 8-in diameter.
    • Heat a pan on medium heat, when it is hot, transfer the flattened roti on to the tawa by flipping the foil paper and gently pushing it onto the pan. Cook for 2-3 minutes. Flip and cook the other side. A little oil can be used while cooking the roti.
    • Transfer to a platter. Repeat with the remaining dough portions. Serve with Lunumiris or pol sambol.

      Wow such a delish platter there! Love pol roti, have made quite a few times. That amazing flavor of coconut, fabulous! your spicy side of chilli sambal sounds more interesting, will check that too!
