    Raw Mango Jicama Carrot Salad

    This is an easy, delicious, healthy, and flavorful salad with unripe mangoes, carrots, and Jicama, and with simple flavoring of salt, lemon juice, and cayenne. This can be had as a meal when you do not want to crank up the oven in summer or as a side, taking only a few minutes to make.

    Jicama is a root vegetable that is globe shaped with brown exterior skin and white flesh. The flesh is crunchy, juicy, with a nutty flavor. This is also called Chinese turnip or Mexican water chestnut. Jicama, though rich in carbs, also contains small amounts of vitamin E, thiamine, riboflavin, vitamin B6, pantothenic acid, calcium, phosphorus, zinc and copper in addition to fiber. We love to snack on this veggie with a little salt and chilli powder just like mango wedges.

    This is an easy salad to prepare. The prep time is only the time taken to make this. I prefer to have the veggies as matchsticks. Thick shreds or cubed veggies are also an option. Just play around with your preference. Cayenne can be adjusted as per your heat level. The dressing is simple with salt, lemon juice, and cayenne. Chopped green chiles can also be added. This salad is forgiving, any quantities of the veggies can be used. I have useda  1:1 ratio but can be adjusted according to what you have on hand.

    When mangoes are in season, both the ripe and unripe version tastes addictively delicious and divine! Mangoes are loved in dessert form like this Kulfi or Icecream, or even this Mango Falooda Monster Shake. Mango and summer treat falooda is a match made in heaven. The unripe ones are amazing to snack on or is famous for the amazing pickles made with them. This Instant Mango Pickle is one such pickle that I shared for Blogging Marathon.     Salads are very healthy and loved very much in our home. Most of the salads require no cooking and are a great choice for summer, though they can be had any time of the year. This Orange and Greens Salad is an amazing one with sweet and savory flavors. Protein rich Dal Sprouts Salad is a very healthy one too! Beetroot Salata is a perfect one to use season's best beetroots. Sometimes I add some cooked grains to the salad and make a very balanced meal with minimal cooking. This Jowar/Sorghum Salad and Greek Style Millet Lettuce Boats are of that kind. This Quick Veggie Salad is easy to fix with minimal work and love this equally to our traditional Kochumber.

    Ingredients
    Serves 2 to 4
    Unripe mango - 1 cup, matchsticks
    Carrots - 1 cup, matchsticks
    Jicama - 1 cup, matchsticks
    Salt - 1/2 tsp
    Cayenne - 1/2 tsp
    Lemon juice - 1.5 tsp
    Cilantro - 1 tsp, chopped
    Method

    Prep the veggies. Chop into matchsticks.

    Add everything to the bowl, mix.
    Serve immediately.
