    Vegan Baby Buffalo Potatoes

    Are you ready to dive in and experience the amazing Buffalo Potatoes? Well, baby Buffalo potatoes. The creamy, meaty potatoes smothered in a spicy, salty, sour sauce is the ultimate! This recipe is vegan using plant based butter. This is a great game day food!

    Now, What is a Buffalo Sauce? Well, it was originally made in the city of Buffalo, NY, by Teressa Bellissimo and hence the naming.

    If you are wondering what this sauce is made of or how does it taste, here is the fact.  It is made of Cayenne hot sauce, butter, a little garlic,and a tiny splash of Worcestershire sauce can also be added. To make it in a smooth form use corn slurry, if you are planning on stocking in your fridge. This tastes salty, spicy, buttery, and sour. The sour flavor starts first and then the heat kicks in.  Kind of lot of good flavors. 

    Worcestershire sauce can be replaced with soy sauce, but I didn't use either. Butter to cayenne sauce is 1:2. Different kinds of plant based butter are available in stores and I have used one based on almond oil. I added a little cayenne too to kick up a little balancing the vinegar from the hot sauce. I used Frank's Red Hot Sauce.

    This can be served as such or with a creamy dip like ranch. It is great to make these into wraps or sandwiches too! Leftovers, if any, take these avatars in our home!

    This recipe uses baby potatoes. If you do not have just use regular potatoes but chop them to smaller size for even roasting. I have oven roasted them and then mixed with the Buffalo sauce. Alternatively, the potatoes can be cooked on stove top until fork tender and then deep fried. Instead of deep frying, I chose to roast them straight in the oven just like how I did in this Oven Roasted Curried Baby Dutch Potatoes. 

    Potatoes are amazing as a starter or in curries like this Kashmiri Dum Aloo or Baby Potato Kurma. They can be great as a one pot meal like in this Baby Aloo Pulao. I love chaat and potatoes are part and parcel of chaat. I love the fusion Baked Potato Ragada Chaat and Aloo, Channa, Paneer Pie.

    In every form, potatoes are addictive, scrumptious, and delicious. That's why I chose to share recipes featuring potatoes for this wek's Blogging Marathon. Paneer Tikka Poutine and Vegan Curried Baby Hasselback Potatoes are delicious versions of potatoes just like this Buffalo baby potatoes.

    Ingredients
    Serves 6 -8
    Baby potatoes - 1.5 pounds
    Oil - 2 tbsp
    Salt - 1/4 tsp
    For the Buffalo Sauce
    Frank's Red hot sauce - 1/2 cup
    Plant based butter - 4 tbsp
    Garlic powder - 1/4 tsp
    Cayenne - 1/4 tsp
    Method
    Preheat the oven to 400 degrees F. Apply a little oil and sprinkle salt and roast the potatoes for 35-40 minutes.

    Heat a pan on medium flame, add the hot sauce, plant based butter, garlic powder, and cayenne. Just simmer for a minute for everything to combine into uniform consistency. Switch off the flame.

    Add the pottaoes to the sauce and toss well to coat uniformly.

    Transfer to serving bowl. Serve with a dip or as such.
