    Slow Cooker Rajma

    This is the amazing, tasty, vegan rajma made in slow cooker! Perfect, comforting curry that can be served with rice or flatbreads. Also, make it a little thin and can be a hearty soup. This is a comfort food for us!

    Rajma is a traditional kidney bean curry or stew and like any recipe, will have multitude variations around. But most of the flavor components are the same. It is protein rich, vegan and comforting! Traditional rajma curries are vegan unless you add a dollop of cream to decorate, and that can be skipped to make vegan version. I make the creamless version always as the curry is very tasty and doesn't require extra cream. Feel free to add if preferred.
    Rice and rajma is always heavenly! But you need to stand in front of the stove while cooking and when we are always short of time, we do need a helping hand. Slow cooker is one such gadget! Throw everything and go, come back home to a nice meal! This curry is one among those. 
    Though many beans can be cooked in slow cooker directly without soaking, kidney beans is an exception. Un soaked kidney beans may be toxic and hence it is always good to use soaked or cooked ones. I always store some soked beans in freezer and that comes in handy when needed. 

    This recipe uses cooked kidney beans. A cup of dried beans would make about 2.5 to 3 cups of cooked beans. Canned beans can also be used. For this recipe use two 14-oz kidney beans cans. Cooked beans can be set in lo mode for seven hours. If using soaked kidney beans, set it in hi and may require extra water for cooking. Adjust according to the bean used.

    Rajma masala is a blend of spices used in particular for the curry. This can be made at home or store bought too. Dried methi/fenugreek leaves and rajma masala would be available in Indian grocery stores. This recipe uses canned crushed tomatoes, use about three good sized fresh tomatoes if using fresh tomatoes. Instead of chopped onion, garlic, ginger, and tomatoes, just blitz them in food processor and add to the slow cooker. That adds to the flavor as well as creamytexture of the resulting curry. As per time availability and preference, these can be changed and work perfectly fine.

    Slow cookers are amazing and many Indian curries can be made in it. It's a breeze! Like this Slow Cooker Vegetable Curry with lotsof veggies and creamy coconut milk and the curry is vegan too!     Ingredients
    Serves 6 to 8 as a side
    Prep time - 10 min
    Cook time: 7 to 8 hours
    Kidney beans - 3 cups, cooked
    Salt - 1.5 tsp
    Turmeric - 1/2 tsp
    Cayenne - 1/2 tsp
    Rajma masala - 2.5 tsp
    Onion - 1 cup, chopped
    Ginger - 1 tbsp, chopped
    Garlic - 1 tbsp, chopped
    Water - 1.5 cups
    Crushed tomatoes - 3/4 cup
    Cumin - 1/2 tsp
    Cuminpowder - 1/2 tsp
    Coriander powder -1/2 tsp
    Dried methi leaves - 1 tbsp
    Method
    Add everything except dried methi leaves into the slow cooker and set it on Low for 7 to 8 hours.

    Open and mix, mash a little for a creamy texture.

    Add dried methi leaves and stir.

    Serve with rice or flat breads.
