This slaw is very simple to make. I like simple and healthy recipes. Simple ones are always repeated often than elaborate recipes. This tasty slaw takes just a few minutes to make. Shred the veggies, add the dressing and it’s ready. Shredding zucchini or carrot doesn’t take too long. Hence, this slaw is always a winner.
Even people who don’t like zucchini, May start to love it, yes, not just like it but love it. I can guarantee that. My son approved my zucchini recipes, who is very picky thinking that there might be squash and zucchini in the food….. Many times I try to sneak more veggies just like every mom:-). Yes, he loved this slaw and was asking for more and said that I know this is zucchini but it is very good. There came the certification! Kid approved, adult approved! Thus us will lived in your home.
The dressing is very simple to make. I always use vegannise instead of Mayo. If you are ok with eggs, use mayo. Sambal paste gives the heat and if you don’t have that use siracha paste. With a little lime juice and salt, the creamy spicy dressing is ready. Just add that to the salad and enjoy.
This slaw can be used in sandwiches and wraps. This alone could be spread to make tea sandwiches and wraps too! We love them. Add this slaw on top of your burger to jazz it up. Ingredients
Zucchini - 1 and 1/4 cup, thick shreds
Carrot - 1 and 1/4 cup, thick shreds
Onion - 1/4 cup, finely chopped
Cilantro - 2 tbsp, finely chopped
For the dressing
Vegannaise - 3 tbsp
Sambal or sriracha - 3 tsp
Lime juice - 1 tsp
Salt - 1/4 tsp
For garnish
Peanuts - 2 tbsp, toasted and crushed (optional)
Method
Add the shredded zucchini, carrots, onion, and cilantro in a bowl.
Add the vagannaise, sambal paste, lime juice, salt, and mix well.
Add the dressing to zucchini slaw. Toss well. Top with crushed nuts if preferred.
Serve immediately.
