    3-Tier Eggless Tiramisu Cake

    This is delicious cake based on the popular Italian dessert, Tiramisu. This eggless and is a 3-tiered cake making this a perfect special cake for parties. In this cake each layer has a double layer drizzled with coffee, filled with mascarpone cream, and sprinkled with cocoa powder. Sounds amazing and delicious, right?
    In tiramisu, the Italian ladyfinger cookies are cooked in coffee, and is layered with egg-based mascarpone rum/wine cream. In the making of this cake, it is egg-free and alcohol free and hence kids can enjoy the dessert. In our home, tiramisu is our family favorite and check this fruit twist on the classic dessert which is addictive, Pineapple Tiramisu. This cake is based on condensed milk and uses aquafaba too. Check this Rainbow Cake made with condensed milk. Now-a-days I am exploring the aquafaba usage in a lot of baked goods. The added aquafaba results in a much softer cake. 
    The measurements below makes a 3-tier cake - two 9-in cakes, two 6.5-in cakes, and two 4-in cakes. This is easy to make too. Bake the cake, make the cream, drench the top of the cake with coffee, fill inside the layers and frost each tier, secure the tier with skewers, and finish up the frosting, and sprinkle cocoa powder. You can completely frost or do a naked frosting. In both ways, it is addictive. The smallest 4-in layer bakes in 11-12 minutes, and the other two layers are done between 14-16 minutes. Checking for a clean inserted toothpick is beast depending on your oven. Here is a quick tip for frosting the cake. Insert pieces of parchment under the base layer for clean finish. When the decoration is complete, these parchment papers can be pulled out leaving a neat cake.
    I have made this cake for my son's birthday party. Tiramisu is his favorite. So made his favorite dessert based cake. Since we had many people we made a three layered cake, this can be made in single layer too. We had an anime "Attack on Titans" themed party. We used White chocolate KitKats for building the three walls on the three tiers. We had a small space without wall on the bottom cake layer where the Titan can be seen. We printed image of Titan and Levi, and laminated it. We inserted the Titan on the base layer and attached the KitKats on both the sides. The laminated Levi was taped to a toothpick and inserted on top as a cake topper. This is one of a kind DIY anime theme cake.

    Ingredients
     
    All-purpose flour - 3 cups and 6 tbsp
    Baking powder - 3 tsp
    Baking soda - 1.5 tsp
    Condensed milk - 1 and 1/2 cans - 14-oz cans each
    Butter 3/4 cup or 1 and 1/2 sticks
    Salt - 3/8 tsp
    Aquafaba - 4 tbsp
    Milk - 1 and 1/4 cup
    Apple cider vinegar - 3 tbsp
    Vanilla - 2.5 tbsp

    To drizzle
    Water -1/2 cup
    Instant coffee powder - 2 tsp
    For frosting
    Mascarpone cheese - 16 oz
    heavy whipping cream - 2 cups
    Powdered sugar - 2cups
    Cocoa powder - 3 tbsp
    Method
    Preheat the oven to 350 degrees F. Prepare all the pans by spraying non-stick spray or smearing butter-flour mixture. Line with a parchment. 

    In a bowl add the dry ingredients and set aside.

    In another bowl, beat butter, condensed milk, and aquafaba till light and fluffy. Add the milk and vanilla, mix thoroughly. 
    Add the dry ingredients slowly and make a smooth cake batter. 

    Finally add the apple cider vinegar and combine thoroughly.

    Add half cup batter to 4-in pans. Add three quarters to 6.5-in pans. Divide the remaining batter into the 9-in pans. 

    Bake in the oven. The 4-in cakes will be ready by 11-12 min and the other pans would be baked completely in 14-16 minutes. 

    Cool the cakes completely. In the meantime, whip the mascarpone cheese, cream, and powdered sugar to stiff peaks.

    Add coffee to hot water and mix. Two teaspoons of sugar can also be added if you prefer. Mix thoroughly and cool. Trim off the cake to even top. With a brush, drench on one side of the cake completely.

    For the decoration: On a turntable, keep a cake board. Place one 9-in cake and insert pieces of parchment paper. Add cream to the coffee drenched side and spread evenly to desired thickness. Sprinkle cocoa powder generously. Add the second 9-in cake. 

    Spread frosting evenly and cover on all sides. Double coat is recommended if not doing a naked cake. If needed refrigerate the and continue frosting to smoothen out.

    Repeat with the 6.5-in layer similarly.

    Add the 4-in cake and repeat the same frosting steps. Insert three measured skewers on to the cake such that it reaches from top to bottom holding the cakes together.

    With a tea filter or sieve, sprinkle generous amount of cocoa powder to cover the entire space.

    Once all these steps are done, slowly pull out the parchment paper from the bottom base.

    With the remaining half  to three-quarters cup frosting, pipe decorations on the edge or use for attaching other decoration elements. The cake can be served at this stage. We had hole in the wall idea of the Attack on Titan cake, used white KitKat to make wall effect and in between a space made-out to serve the hole where the titan can be seen. On top we had Levi figure printed and laminated as the cake  topper.
