    This baked gnocchi with tomatoes and basil is the ultimate cozy meal with Soft, pillowy gnocchi are nestled in a bubbling sauce of garden fresh tomatoes and fragrant basil.

    Why this baked gnocchi?

    Simply because this is irresistible! This baked gnocchi with fresh tomatoes and fresh  basil is one of the best baked meal of the season!

    Fresh Tomatoes are juicy with peak flavors and Summer is the season for loads of fresh tomatoes and basil. The fresh veggies and herbs of the season always make the most tastiest meal even with less ingredients.

    Along with a little mozzarella is heaven. Tomatoes, basil, and mozzarella are perfect flavor partners and this and baked until golden - the perfect way to enjoy a satisfying, comforting, and flavor packed meal.

    In fact, this is a meal with all your favorite ingredients! Gnocchi, tomatoes, basil, mozzarella cheese, and garlic. This not only is packed with the flavors from these ingredients but with textures too! Soft and cloud like gnocchi with crunchy pine nuts and ooey gooey cheese, this is heaven in a bite.

    In short, it's a simple comfort food with a vibrant, summery twist perfect for weeknight dinners or casual gatherings.

    Ingredients

    To make this delicious meal of baked gnocchi with tomatoes and basil, you will need these ingredients:

    Gnocchi - fresh homemade or storebought gnocchis work well. This is an eggless recipe using homemade eggless gnocchi. You may also use any gnocchi of your choice in this recipe.

    Basil - both fresh and dried basil work. You may use fresh basil compleyetly during the season and use dried basil in winter to enjoy this meal all year through. The fresh basil added in the following step of baking fills your home with inviting aroma. Add more basil if you prefer.

    Tomatoes - fresh tomatoes are the key to this recipe packed with flavors. I like to preserve the juices when it bakes and the gnocchi absorbs all the juices. So I have used the tomatoes without removing the inner seeds and juices. If you don’t prefer, scoop it out and bake.  

    Salt - gives flavor

    Onion and garlic - adds extra layer of flavor and aroma

    Black pepper and pepper flakes - For that spicy kick. Adjust the quantity as per your spice tolerance

    Mozarella balls - these tiny cheese balls add to the ooey gooey richness of the meal.

    Olive oil - Adds to the flavor while cooking the veggies.

    Serving Suggestions

    I serve this hot, straight from the oven! It is heavenly! Add extra garnish with fresh basil and a sprinkle of Parmesan for an extra elevated meal.

    I also pair it with a crisp green salad or garlic bread for a complete meal. We love toasted garlic bread with pasta always. It is a heavenly match.

    If you prefer extra spicy, sprinkle additional chili flakes. Or pesto for additional flavor.

    Storage

    I store leftovers in an airtight container for up to 3 days. Reheat in the oven at 350°F until warmed through, or microwave in short intervals.

    Ingredients

    • 1¼ lb Gnocchi
    • 2 lbs Tomatoes quartered
    • 1¾ tsp Salt
    • 2 tbsp Olive oil
    • ½ tsp Pepper
    • 1 tsp Dried basil 
    • 2 tsp Garlic finely chopped
    • 1½ cups Onions sliced
    • 16 Mozzarella balls  have
    • ⅓ cup Fresh basil chopped
    • 2 tbsp Pine nuts toasted
    • Water to cook gnocchi
    • chili flakes

    Instructions

    • Preheat the oven to 400 degrees F.
    • Add the quartered tomatoes, sliced onions, and garlic to a baking tray. Add salt, olive oil, pepper, dried basil and toss well. Bake in the tray or in a baking dish fir 40-45 minutes.
    • In the meantime, cook the gnocchi and set aside. Gnocchi should be done in 4-5 minutes. It rises to the top and floats when cooked.
    • Remove the tomatoes from the oven. Transfer to a bowl.
    • Mash the tomatoes gently. The juices from the tomatoes make the sauce.
    • Add the cooked, gnocchi, halved mozzarella balls, and quarter cup fresh basil. Sprinkle vegan Parmesan. Mix well and bake for 20-22 minutes or until the mixture is bubbly and the cheese melted.
    • Remove from the oven.
    • Garnish with the rest of chopped basil and pine nuts. Serve warm.

      I read somewhere many years ago that a lot of the flavor in tomatoes is found in the peel and seed parts so I rarely discard them. And, of course, roasting them concentrates the flavors. Your dish looks wonderful!
