This Angel Hair Pomodoro is made with fresh Roma tomatoes. This is my first post for the A-Z Noodles from Around the World theme.
We love tomatoes and different varieties have different tastes. Our favorite way to make this simple and comforting, lip-smacking sauce is by using roma tomatoes. Whenever I see the price go down in the market, I will get loads of them. Now, I am making a point to grow this variety too along with the other tomatoes I am growing.
Blanch the tomatoes, peel, and chop them to make sauce. The juicy tomatoes add tons of flavors. The fresh basil add another dimension of flavor. Always, use best olive oil for this recipe. With these three points noted down, any one can make best angel hair pomodoro.
We used to order this often in Italian restaurants. Well, that was before the pandemic. But we enjoyed making at home many times. Angel hair pasta is very fine noodles. It is like very thin vermicelli. This shape is so mesmerizing for me. When you assemble the pasta and look, it is so appealing and all of a sudden it makes you very very hungry. The aroma from the sauce and fresh basil will make anyone hungry for pasta.

Ingredients
Serves 4 to 6
Angel hair pasta - 1 lb
Water
Salt - 2 tsp
Olive oil - 1 tsp
Pomodoro sauce
Olive oil - 1/4 cup
Salt - 1.5 tsp
Pepper - 1 tsp
Roma tomatoes - 3.5 lbs
Basil leaves - 1 cup, loosely packed
Garlic - 2 to 3 cloves
Thyme - 1/4 tsp
Oregano - 1/4 tsp
Parmesan cheese - to top
Water for blanching the tomatoes
Method
Bring water to boil. Chop the top of the tomato, make a slit at the bottom, and blanch the tomatoes in 2-3 batches for 3 minutes. Take them out and let it cool for 5 minutes. Blanch the rest of the tomatoes. Once cool, peel them, and chop. Set aside.
Heat olive oil in a heavy bottomed pan, add garlic and sauté for a minute till nice aroma floats around. Add in the chopped tomatoes. Add salt, pepper, thyme, and oregano. Simmer for 10 minutes stirring now and then on a medium flame. Roll the basil leaves, slice, and add in half of the basil. Pasta sauce is ready.
In the meantime, cook the pasta according to the package directions. Drain and set aside.
Take a serving bowl, add pasta, top with fresh pasta sauce. Top with some reserved basil, and add parmesan if preferred.
Serve with toasted bread or garlic bread.

This is my kid's go-to good. With slight changes this is what their comfort food is. The sauce looks vibrant and very inviting.
