    Blue Curacao Velvet Cake #ChristmasSweetsWeek 2020

    At this time of the year, we can see red velvet cake in many bakeries as well as in stores. They are so tasty and delicious. Can't deny it. But I was experimenting as usual and missed the summer vibes. So I decided to make a blue velvet cake. In a couple of tries, I changed it to blue curacao velvet cake. We loved the taste and color of the cake. Added some blue curacao syrup and some lime zest and it turned out to be ultimately delicious. This cake doesn't have any cocoa or buttermilk in it. But has a velvety finish. This is a different genre of flavor, I would say.

    I made this cake for my friend's birthday. Since she loves blue color, this cake suited as the perfect cake for her birthday. The blue color turned out to be amazing. A note of caution - this uses a lot and a lot of blue food coloring. And hence use gel food coloring only.

    The blue and white color of the cake and frosting also remind of the beautiful winter with summer flavors. This is perfect for any holiday dessert and no doubt everyone would love it. I am posting this for #ChristmasSweetsWeek 2020.

    Ingredients

    All-purpose flour - 2 and 1/4 cups
    Milk 1 and 1/2 cups
    Butter -1 stick
    Salt - 1/4 tsp
    Baking soda - 1 tsp
    Baking powder - 2 tsp
    Blue Curacao - 1/2 cup
    Sugar -1 cup
    Lime zest - 1 tsp
    Apple cider vinegar - 2 tbsp
    Blue food color - 0.75 oz(1 and 1/2 jars)
    Purple color - a tiny bit

    To Soak

    Water - 1/3 cup
    Blue Curacao - 1/3 cup

    Frosting

    Heavy whipping cream - 3 cups
    Confectioners sugar - 10 tbsp
    lime zest - 1/2 tsp
    Additional decorations
    Candy melts - 1/2 cup to 3/4 cup
    Sugar sprinkles

    Method

    Preheat the oven to 350 degrees F. Grease either two 9 in pans or 2 6-in pans and 2 smaller pans and line with parchment paper.

    Mix flour, salt, baking powder, and baking soda in a bowl and set aside. In a stand mixer or in a bowl, cream butter and sugar till fluffy. Add milk and beat. It will look curdled but it will turn out ok. Then add the dry ingredients slowly till well combined.

    Add in the blue curacao and food coloring, continue to beat till well combined and the food color uniformly distributed. Add the apple cider vinegar and lime zest, mix well.

    Distribute equally into the greased pans. Bake till a toothpick comes out clean. If you are baking in 6-in ones, it may be around 18 -20  minutes. 9-in maybe around 24-26 minutes. Check according to your oven. Cool completely. Transfer to a plate. Mix 1/3 cup water and 1/3 cup blue curacao. Drizzle this evenly on the cakes and let it soak in it. 

    In the meantime, whip the cream, powdered sugar, lime zest to stiff peak. Crumb coat the cake first and refrigerate for 30 minutes. Finish the second coat of frosting. Melt the candy melts and using the back of a spreader or spoon, dip and make streaks to resemble flower petals on a parchment paper. Let it cool. Carefully stick them with a little cream in the form of a flower on top of the cake. 

    Decorations can be done as per your wish. Buttercream can be used too.
