These are double delicious pretzels with double the jalapenos and cheese! These soft and chewy pretzels have both the jalapenos and cheese in the dough and as a topping.
Pretzels are always special. Whenever we get a chance, we buy Auntie Anne's or Pretzel Wetzel pretzels. We buy the jalapeno pretzel almost 99% of the time. Pretzel is unique because of the way it is made. These are cooked in water with baking soda and that gives them the characteristic outer layer and flavor.
I was planning to make our favorite jalapeno cheese pretzel for this event. We were watching Guy's Diners, Drive-ins, and Dives, and in one of the episodes, one of the baker was making bagels with tons of jalapenos added to the dough. We thought why not make a similar version of pretzel, and this pretzel with cheese and jalapenos in the dough as well as on the outside topping came into existence. Once it came out of the oven, all of us devoured them! These tasted the best!
We had these soft pretzels with honey mustard cheese sauce. They would taste great with honey mustard too! The sauce, the pretzel with jalapenos and cheese, tasted phenomenal. This recipe uses white cheddar, regular cheddar also works fine.

Ingredients
Makes 8
All-purpose flour - 3 cups
Salt - 3/4 tsp
Cheddar cheese - 1/2 cup
Chopped jalapenos - 1/2 cup
Active dry yeast - 2 and 1/4 tsp
Sugar - 1 tsp
Water - 1 cup
Cheddar cheese - 2 cup
Jalapenos - 1/2 cup, chopped
Water - 8 cups
Baking soda - 1.5 tbsp
Flaky salt
Method
Activate the yeast warm water and sugar.
Add the flour, salt, and activated yeast to the bread machine bowl, and set in dough cycle. At the end of the cycle, in the add-ins phase, add quarter cup chopped jalapenos and one cup cheddar cheese.
Let the dough proof for an hour.
Divide the dough into eight portions, roll the dough, cover when working with other dough portions.
Take each portion and elongate into a thin rope of 17-18 inches long. Shape them into the classic pretzel shape.
Preheat the oven to 475 degrees F.
Heat the water in a big pot and when it begins to boil, add the baking soda. The mixture will bubble rapidly. Add the shaped pretzel one by one, cook for 30-40 seconds. Remove from the boiling water, and place on a parchment lined baking sheet. Repeat with all the pretzels.
Remove from the oven, cool. Serve with mustard or honey mustard cheese sauce.

Oh my goodness!! These remind me of the asiago cheese bagels from Panera, but with the added jalapeño. The combination sounds divine! Pinning for later!
