    Sheet Pan Okra #farmersmarketweek

    This is a delicious, vegan, and healthy okra with aromatic spices made in a sheet pan. This easy to make curry is a perfect side to serve with roti, naan, or rice/cooked grain.

    There are many reasons as to why you should try this sheet pan okra. With the following reasons it is easy to choose this recipe over anything. 

    • This recipe uses less oil compared to stove top version
    • This is cooked in a sheet pan. 
    • Less clean up 
    • Easy to make
    • Less active stirring time

    We love okra so much! Though okra is well known as a slimy veggie, cooking it the right way gives a perfectly shaped cooked okra. It is always better to pat them dry after washing, and add salt after okra has cooked completely while sautéing. This prevents okra becoming slimy and mushy.  This can be made easily in a sheet pan and there is no standing near the stove stirring often. That's a winner when you want to cook easy and tasty food.
    I prefer to roast the okra at 400 F for about 25 minutes. This can be done at 425 F too for 20 minutes. Sometimes okra gets burnt at 425 and so I prefer to roast at 400. Make sure to spread it into a single layer on the sheet for perfect results. Else, it will result in sweating and may result in a mushy okra. 
    This curry is made with simple pantry essential spice powders. Cumin powder, coriander powder, turmeric, and cayenne are simple ingredients that you would always have in your pantry. This is another plus. This curry can be served with roti, any flatbreads, or rice (or any cooked grain). This is one of the okra curry that my kids always request for. The other okra curry being this Dahi Bhindi (Bhindi in Hindi is okra).

This is our favorite veggie and this favorite curry of ours is a perfect share for the event.

    This okra curry is perfect for everyday rotis as well as for gatherings. We love it so much that we make it often or double the recipe. If you are looking for delicious sides like this curry, check the following and you won't be disappointed.

    Ingredients
    Serves 4 to 6 as a side
    Okra - 1 lb, cut into 1 or 1.5-in pieces
    Onion - 1cup, chopped to 1-in pieces
    Tomatoes - 1/2 cup
    Oil - 2 tbsp
    Salt - 3/4 tsp
    Cumin powder - 1/4 tsp
    Coriander powder - 1/4 tsp
    Cayenne - 3/4 tsp
    Turmeric - 1/4 tsp
    Cilantro - 1 tbsp, chopped
    Method
    Preheat the oven to 400 degrees F. Add the okra, onions, and oil to a sheet pan. Gently mix and spread it into a single layer. Roast for 25 minutes.

    Remove from the oven.

    Add the tomatoes, salt, cumin powder, turmeric, cayenne, and coriander powder. Gently mix thoroughly. Return to the oven and continue to roast for 10-12 minutes.

    Transfer to a serving bowl, garnish with cilantro. Serve with flatbreads or cooked grains.
