    Paneer Burji

    This is one of the healthiest and easiest curry that can be made in a jiffy! This can as such become a breakfasy or used as a side for roti/paratha. 
    Paneer is non-melting soft cheese made with cow/buffalo milk. It is made by curdling milk with vegetable based acid or with vinegar. Paneer is rich in protein and calcium and is used in many recipes in Indian Cuisine and also work great for many fusion recipes too!
    Paneer is always kids favorite as well as adults. This protein rich meal is easy to make. This can be made with fresh paneer, but when in time constraint, just grate a block of paneer. This is what I do often to make a quick fix. Plus this is easy to use in many ways from breakfast to snack to dinner. Any meal can be this or made with this. For example, Paneer Burji Swirl Bread is a super soft bread that can be easy to make as a main or amazing with soup. Paneer Burji Naan Grilled Cheese is yet another cheesy and satisfying meal. In addition, they can be used for an easy sandwich or wrap that are easy to pack for lunch.

    Ingredients
    Serves 4 to 6
    Paneer  -2 cups, shredded
    Onion - 1/2 cup, chopped
    Bell peppers - 2/3 cup, chopped(mixed colors)
    Tomatoes - 2/3 cup, chopped
    Garlic - 2 cloves. chopped
    Ginger - 1/2 tsp, chopped
    Oil - 2 tbsp
    Cumin - 1/2 tsp
    Salt - 3/4 tsp
    Turmeric - 1/4 tsp
    Cayenne - 1/2 tsp, 
    Green chile - 3 chopped fine
    Garam masala - 1/2 tsp

    Method
    Heat oil in a pan on medium flame and add the cumin, ginger, garlic, and green chiles. Saute for a minute and add the onions. Continue sauteeing for 3-4 minutes till onions are translucent.

    Add the bell peppers and tomatoes and saute for 5 minutes.
    Add the grated paneer followed by salt, turmeric, cayenne, and garam masala. Mix thoroughly. The paneer will soften and cook for 2-3 minutes.

    Add cilantro, mix and switch off the flame.
    Serve with paratha, bread, or roti!
