    Roasted Brussels Sprouts and Cippoline Onion Taco With Hatch Chili Cream

     
    This is a lentil taco with roasted purple brussels sprouts and Cippoline onions drizzled with hatch chili cream. This taco has lot of veggies and is very nutritious. This taco is perfect for Meatless Mondays or Taco Tuesdays.

    This taco has the perfect balance in flavors. Brussels sprouts have a mild bitterness. the purple brussels sprouts tasted great and the bitterness was not that pronounced. This along with the sweetness from the Cippoline onions are perfectly balanced by spicy hatch chili cream, sweet carrots, and meaty lentils. Every bite is heaven!
    Cippoline onions - these are very sweet onions and are very great for caramelized onion recipes. I roasted them till it got caramelized and that was perfect to taste. These are very great in many recipes like tarte tatin, quesadillas, dips, and even in burgers. Look at how beautiful the caramelization is! In this recipe, this onion shouldn't be replaced by any other onion. Cippoline onion has the perfect flavor.
    Lentils get cooked in 15-20 minutes and in the meantime, brussels sprouts and onions can be caramelized. So, this is a great dinner for any day. Instead of lentils any beans can be used. Canned ones also work and saves time.

    With hatch chili in the markets everywhere, I am using it in various recipes and liked the cream to use in this taco to balance the flavors. This cream is spicy, be sure to reduce or increase the quantity of hatch chilies as per your preference. Also, if you don't have access to hatch chilies, it is ok to use serrano or habanero peppers. Cotija cheese can be used. Since it uses animal rennet, I have used an alternative. Feel free to use any cheese of your choice. 


    Ingredients

    Makes 8-10 tacos
    For Roasting
    Melissa's Cippoline Onions - 14-16, peeled, and halved
    Melissa's Purple Brussels sprouts - 16, halved lengthwise
    Salt - 1/4 tsp
    Pepper - 1/4 tsp
    Oil - 2 tbsp
    For Hatch Chili Cream
    Hatch Chili - 2
    Salt - 1/2 tsp
    Lime juice - 1.5 tbsp
    Cilantro - 1/4 cup, medium packed
    Sour cream - 3/4 cup
    To assemble
    Corn Tortilla - 10
    Lentils - 1/4 cup
    Salt - 1/8 tsp
    Sweet red pepper - 1/3 cup, sliced
    Carrots - 1/3 cup, shredded
    Cilantro - 1 tbsp
    Queso blanco - 1/4 cup
    Method
    Roast the hatch chili until it has a nice char. Tis may take about 5-7  minutes.

    Cover and let it cool. Peel and set aside. Remove the seeds if preferred. I didn't remove them.

    Bring the lentils to boil and cook for 15 minutes or until tender. Add salt and simmer for 2 minutes. Drain and set aside.

    Heat a tablespoon oil in a cast-iron pan, place the brussels sprouts face down, sprinkle with salt and pepper (18th teaspoon each) and roast for 3-4 minutes. Flip and roast for another 2 minutes. Remove from the pan and set aside.

    In the same pan, add another tablespoon oil, place the onions, cut side facing down , sprinkle with 1/8 teaspoon each of salt and pepper, roast for about 3-5 minutes, or until there is a nice caramelization. Switch off the flame, and flip the onions. In the heat of the pan, the other side gets cooked, but not too much as the shape and texture of the onions shouldn't get mushy.

    Add the hatch chili, cream, salt, cilantro, and lemon juice to food processor, and blitz a few times to make a smooth cream. 


    Transfer to a bowl and set aside.

    To assemble the taco: Heat the tortillas on fire and Keep all the things for the taco.

    Place a tortilla on a plate. Add a little of carrots followed by a tablesppon of lentils. Next, add the roasted brussels sprouts and cippoline onions (3-4 pieces each), followed by sweet peppers, cilantro, and cheese. Drizzle a little or more of hatch chili cream.

    Serve immediately.
