    Litchi Black Tea

    Litchi black tea is a refreshing tea made black tea and litchi fruit. This is a tea that originates from China. This recipe is about making litchi black tea using canned litchi. Teabags with litchi peels are available too. Litchi flavored syrups can be used but I love the flavor of natural fruit. This is one of tea that I like in the tea joints just like the Winter Melon Iced Tea and Milk Tea.
    Litchi is a tropical fruit and one of our favorites. Sometimes we get in some markets and at the most we made ice-cream sometimes. We gobble it up so fast that we never made any tea with fresh fruit. Since I miss this fruit and found a can of litchi, I wanted to make it right away. Plus it is unsweetened, and hence helps to control the sugar in the tea. About two to three tablespoons of syrup can be used for each serving, but that can be reduced if boba is also added (boba is in syrup or brown sugar syrup).

    Ingredients
    Makes 3 servings
    Litchi - 11-oz canned lychees
    Black loose leaf tea  - 2 tsp
    Simple syrup - 1/4 -1/3 cup
    Water - 2 cups
    Vegan litchi jelly - 1/2 cup 
    Brown sugar boba - 3/4 cup (optional) 
    Ice - 3/4 cup
    Method
    Blend the canned litchi with juice and filter. Set aside 2/3 of the filtered juice.
    Boil water, add the black tea and simmer for 3-4 minutes. Filter and set aside.
    Mix the litchi juice with tea and simple syrup. Cool for 30 minutes in fridge.
    To assemble: Add the boba followed by vegan litchi jelly (if using). Add crushed ice. 
    Add the cold litchi tea. 

    Serve.
