    Chilli Soya

    This is a protein rich food, and a spicy one that everyone will love it. This can be served with rice, fried rice, or as an appetizer.
    Soya chunks are made with soy beans and is rich in protein content. It is a perfect choice food to improve health for kids. This can be made in under 30 minutes. When you prep the veggies, boil the soya chunks. Cook some rice simultaneously and a healthy, balanced meal can be made in 30 minutes. This fits perfectly for a weeknight dinner.
    I have added chili garlic sauce for adding some heat. Siracha paste or any chilli sauce can be used too. Green chili peppers add a nice kick to the dish. Adding colored bell peppers gives a colorful appeal to the dish. Just add a couple of pinches of salt while stir-frying the veggies. The sauces have enough salt to give the flavor. Adjust the salt and spice levels accordingly.  To make it a saucy curry, add a slurry of corn starch in water and simmer for a minute. We love both the versions.

    Ingredients
    Soya chunks - 1 cup
    Water - 3 cups
    Oil - 3 to 4 tbsp
    Bell peppers - 2 cups, cubed, any color
    Onion - 1 cup, cubed
    Ginger - 2 tbsp, finely chopped
    Garlic - 2 tbsp, finely chopped
    Green Thai chili pepper - 2 to 3, finely chopped
    Chili garlic sauce - 2 tbsp
    White pepper powder - 1/2 tsp
    Tomato ketchup - 1 tbsp
    Soy sauce - 2.5 to 3 tbsp
    Green onions - 3, finely sliced
    Salt - 1/6 tsp
    Method
    Add water to soya chunks in a sauce pot, bring it to a boil and cook for 5 to 6 minutes. Drain, squeeze and set aside.

    In a cast-iron pan, heat oil. Add the ginger and garlic, sauté for 30seconds. Add the onions and stir-fry for 3-4 minutes, till it is translucent.
    Add the soya chunks, bell pepper, and green chili peppers, sprinkle salt, and stir-fry for 4-5 minutes. 
    Add the soy sauce, chili-garlic sauce, white pepper powder, and tomato ketchup. Stir-fry for 2 minutes. Add the white parts of green onions and half of the green part of green onions, stir-fry for another 30 seconds.
    Transfer to a serving bowl, garnish with remaining green onions. Serve with white rice, or fried rice, or as an appetizer.
