    Caramel Macchiato Mini Bundts

    If you love coffee, this cake is heaven for you. If caramel is your favorite too, then this cake is double heaven. Caramel macchiato is a popular drink in coffee shops. I love the aroma of coffee, that's addictive. Making this cake and writing this post has given me a great trip down the memory lane.
    We have a long list of coffee lovers in our home. My mom used to roast the coffee beans on stove top. Sometimes when we come back from school, it would be filled with nice aroma of coffee beans as she would have roasted that afternoon. When we grew up, we had a small coffee grinder that we fix to a stool and grind the beans. I tried to find an image from Pinterest. We used to take turns grinding the roasted beans to powder. It was fun and that gives a quick break and refreshes you. She then uses the traditional percolator to brew coffee, boils milk and add to individual cup according to the preference of coffee strength and sweetness.

    Now I have coffee grinder and love to make fresh coffee every time for my family, but I miss the olden day manual one. It is always lattes that were made in our homes. Unfortunately, I don't drink coffee as the effect of caffeine is too much for me. One cup in the morning can ruin my night sleep too! Once in a while it's ok  for me to enjoy coffee.
    This is an eggless cake too. I used aquafaba. The result is such a lovely, light, and fluffy cake. It is important to dust the caramel bits in flour and add to the cake batter. This will prevent them sinking to the bottom. The caramel also sticks to the bottom and hence you can't get the cake out in one single piece. The very first time I made this, I messed up. The caramel stuck to the bottom. But it was very tasty. My friends loved the taste even though it was in pieces. Then I improved it and here is the recipe for a better version. Let the cake cool completely, slowly run a knife or spatula all around the edges to check, and then slowly take the cake out. If you want to avoid using caramel bits, that's fine. Just pour extra thick caramel sauce on top of the cake and serve. That works great too!

    Ingredients

    Makes 10 mini bundts
    All-purpose flour - 1cup plus 2 tbsp
    Corn starch - 1 tbsp
    Aquafaba - 2 tbsp
    Brown sugar - 3/4 cup
    Instant coffee powder - 3 tsp
    Butter - 5 tbsp + 1 tbsp
    Vanilla - 1 tsp
    Salt - 1/8 tsp
    baking powder - 3/4 tsp
    Baking soda - 1/4 tsp
    Milk - 3/4 cup
    Caramel bits - 1/4 cup
    Caramel sauce - 3-4 tbsp, or as you wish
    A little flour for dusting the pan

    Method

    Preheat the oven to 350 degrees F. Brush the mini bundt pan with butter and dust with flour. In a bowl, warm 1/4 cup milk. Stir in instant coffee powder and mix thoroughly. Add the rest of the milk and set aside. Add the flour, salt, corn starch, baking powder, baking soda to a bowl, mix and set aside. Add butter, brown sugar, vanilla, and aquafaba to another bowl.
    Beat the wet ingredients thoroughly. Add the coffee, beat well. It may look a little curdled but it is fine. Add the flour in three batches and mix well. Coat the caramel bits in flour and add to the cake batter. Fold and fill the mini bundt pan to 3/4th in each cavity. Bake for 15 minutes.

    Cool on a cooling rack for 15-20 minutes. Insert a spatrula or knife all around the edges, carefully take the bundt cake out of the pan. 

    Drizzle with caramel sauce and serve.

      My grandmother had a manual coffee grinder that was hung on a wall in her walk-in pantry. It was made out of wood and had a little drawer at the bottom that caught the ground coffee. That little pantry was one of my favorite places on earth because of the aroma of coffee and the warmth of the gas water heater that also shared the space.

      I'll bet your little Bundts smell just as good!
