    Apple crisp for one

    Baking pies and cakes are quite enjoyable. Yes, both the process of making as well as eating them with friends and family. Off late, many of us have reduced our sugar intake. Not only, that our portion sizes have also reduced considerably. With all these in the picture, baking a cheesecake, or a pie, or for that matter, any big batch baking has come to a stop sign. 

    It is good to have reduced portions, but why should we miss all the delicacies. We are all quite innovative to make those in small batches and further reducing it to single or two serving ones. This apple crisp is one of that. I and my daughter love these and baking them in a single portion is the perfect thing that we ever did. I have reduced the butter by 1 tsp. Feel free to add that to the topping mixture. From the half baking time, the home is going to be filled with the irresistible smell of cinnamon and apples. I know I had to wait for it to cool too!. Very hard! Taking out of the oven, every time, be it apple pie or crisp, we both have the impatience. But have to wait...hahaha.

    Ingredients

    Apple - 1/2 cup, chopped

    Brown sugar - 2.5 tsp

    Rolled oats - 1 tbsp

    All-purpose flour - 2 tsp

    Cinnamon - 1/8 tsp, divided

    Butter - 1.5 tsp, cold, divided

    Pecans - 2, optional

    Method

    Butter a baking dish or ramekin. Preheat the oven to 350 degrees F.

    In a bowl, add apples, 1/16 of the cinnamon, 1/2 tsp flour, 1/2 tsp butter, and 1/2 tsp brown sugar. Mix well and add it to the ramekins. In another bowl, add the oats, and all of the remaining ingredients and mix well. Add it to the apple bowl. Top with pecans.

    Bake at 350 degrees F for 35 - 40 min. Cool and serve. 

    If preferred, serve with icecream.

      This is amazing! I love apple crisp but nobody else wants in the house so I rarely use it. But I guess now I can make some for myself hehe...
