This is quick refreshing salad made with crisp cucumbers, firm tomatoes, crunchy onions and with a squirt of lime juice.
Every great Indian meal is always accompanied by this simple condiment or relish. The flavors in the salad marry well and gives a flavor burst in your mouth. This can be served along a meal and every bite of it gives the refreshing satisfaction of a great meal. This has no oil, high in fiber, and is a very healthy salad. This can be prepared in 10 minutes. Also, during summer, this salad can become a meal by itself. The cool refreshing taste gives a boost during hot summer days and at the same time gives great nourishment. This is often made salad in our home. Whether we have roti or rice, we would have this.

Ingredients
Serves 2 - 4
Cucumber - 1/2 cup, small dices
Tomatoes - 1/2 cup, diced small
Onion - 1/4 cup, finely diced
Cilantro - 2-3 tbsp
Lime juice - 2 tsp
Salt - 1/6 tsp
Black pepper or finely chopped green chilies as preferred - a pinch
Method
Add everything in a bowl and mix.
Serve with thali, roti, or as a salad.
