Cheesy Corn Dip

This cheesy corn dip with a hint of chipotle has the perfect spicy, smokey addictive flavors!

Ingredients

  • 1 14-0z can Corn drained and rinsed
  • cup Green bell pepper diced
  • cup Red bell pepper diced
  • ½ cup Red onions  diced
  • clove Garlic finely chopped
  • 1 tsp Salt
  • 2 tbsp Serrano peppers finely chopped
  • 1 tsp Jalapenos finely chopped
  • ½-1 tsp Cayenne
  • 1-2 tbsp Chipotle pepper chopped
  • ¼ cup Cilantro finely chopped
  • ½ cup Cream cheese  room temperature
  • ½ cup Cottage cheese
  • ½ cup Sour cream
  • 2⅓ cup Shredded Cheese
  • 1 tbsp Oil

Instructions

  • Preheat the oven to 350℉
  • Heat oil in a cast iron pan. Add the onions and garlic, sauté for 2 minutes. Add the serrano peppers and bell peppers and sauté for a minute or two with 1/8 tsp salt. Keep aside in a bowl. Add the corn to the bowl.
  • Add the rest of the ingredients reserving half cup shredded cheese. Mix to combine all the ingredients well.
  • Transfer to a baking dish. Top with the reserved cheese.  
  • Bake for 16-18 minutes till it is bubbly. Broil for a minute or two for a little golden brown color on top. 
  • Sprinkle with extra cilantro and/or some jalapenos. Serve warm with tortilla chips
