Add the mint, cilantro, black salt, salt, pani puri masala, green apples, apple juice, lemon and lime juice to a blender. Blend to a smooth consistency.
Transfer to a bowl. Top with some namkeens like sev and/or boondi.
To cooked potatoes, add salt, black salt, cumin and coriander powder. Mix well and set aside.
To assemble: Take a puri and gently tap it on one side to poke a hole. Add half teaspoon potato mix, sprouts, cooked garbanzos. Then fill up to the brim with apple pani. Top with sev or boondi and cilantro. Serve immediately. Repeat with the rest of the puri and serve immediately.
