    Coconut Chia Berry Pudding

    This is one of the best and easy breakfast. This is vegan too. This is full of nourishment from the coconut milk and chia topped with fresh fruits. It just takes twenty to thirty minutes to make this. How easy can a breakfast be than this. This can be served as breakfast or as a healthy dessert.

    The chia seeds soaked in coconut milk, layered and topped with fresh strawberries and blueberries is a perfect #redblueandwhite food which could be great on the Fourth of July menu. This can be made in no time or made ahead too. The soaking can be done overnight in fridge too which makes it an easy and healthy dessert.  

    Coconut milk can be replaced by almond, soy, or any plant based milk. Any fruit toppings can be used. Toasted granola or nuts give a great crunch too.

    Ingredients
    Serves 3

    Coconut milk - 3/4 cup

    Water - 1 cup
    Maple syrup- 2 tbsp
    Chia seeds - 1/3 cup
    Fresh blueberries 
    Fresh strawberries 
    Banana slices 
    Method
    In a bowl add the coconut milk, maple syrup, and water. Add the chia seeds and mix well. Set aside for 20-30 minutes or overnight in the fridge.

    In the meantime prep the fruits to be topped. In each serving cup add 1/6th of the portion. Add chopped strawberries and blueberries. 

    Serve immediately.
